Lightened Up Chocolate Peanut Butter Rice Krispie Treats

These Lightened Up Chocolate Peanut Butter Rice Krispie Treats make for an easy no bake chocolate peanut buttery treat- made with only 6 ingredients! These are DELISH-and are a healthier alternative to the classic Chocolate Peanut Butter Rice Krispy Treat-using honey instead of corn syrup!

What Ingredients do I need to make these Lightened Up Chocolate Peanut Butter Rice Krispie Treats?

  • Peanut Butter-any nut-butter can be used in this recipe. I like to use Better’n Peanut Butter which is 3 personalpoints for 2 Tbsp or American Dream Nut Butters “Butter My Cup” which is-1 Tbsp-2 personalpoints or 2 Tbsp-5 smartpoints. I don’t recommend using powdered peanut butter in this particular recipe- the peanut butter is used as a binding and the Rice Krispies will have a difficult time binding to the powdered peanut butter unless it is mixed with butter. 
  • Honey– used as a substitute for corn syrup. Honey is used as a binding agent and helps the peanut butter stick to the cereal and add sweetness to the bars. You could also use pure maple syrup as alternative to honey, if desired. 
  • Pure vanilla extract ⁣- for flavor and sweetness
  • Crispy rice cereal– I use Kroger brand Rice Krispies. You can also use gluten-free Brown Rice Crispy Cereal but any crispy rice cereal would work.
  • Sugar free chocolate chips-I use ChocZero milk chocolate chips. I LOVE  ChocZero no sugar added milk chocolate chips or Lily’s milk chocolate no sugar added chocolate chips.  These two brands are my absolute favorite and have NO bitter aftertaste. ChocZero products are sweetened with a special monk-fruit formula that adds just enough sweetness without the sugar. If you prefer dark chocolate you can substitute the milk chocolate for Lily’s Dark Chocolate Chips, Stevia Sweetened, with no added sugar.  You can find those HERE on Amazon.  
  • Sea salt ⁣⁣or sprinkles- for garnish

What low point peanut or nut butter do you recommend?

Well, my two favorite whipped peanut butters Jif Whips and Peter Pan 1/3 less fat whipped have both been discontinued-but I have since found a few other brands that I LOVE!

How do I make these Lightened Up Chocolate Peanut Butter Rice Krispie Treats?

Line a 9×9 baking pan with parchment paper so that two ends hang over the edges.⁣⁣

In a small saucepan, combine honey and peanut or nut butter. 

Cook over low heat, stirring until mixture is smooth.⁣⁣

 Remove from heat and stir in the vanilla extract until combined.

Add the crispy rice cereal to a large mixing bowl.

Pour peanut butter mixture over the cereal.

and stir until cereal is completely coated.

Transfer to prepared baking pan and press mixture firmly into pan.

Place pan in freezer for 15 minutes.⁣⁣

While bars are setting, melt chocolate chips and 1/2 tsp peanut butter using a double boiler or in a microwaveable bowl for 10 second intervals, stirring in between.⁣⁣

Remove pan from freezer and pour chocolate on top. Smooth with a spatula or spoon.

Sprinkle with sea salt or sprinkles, if desired. 

Place bars in freezer for 1 to 2 hours.⁣⁣ Once the bars have set, slice into squares.

Store leftovers in an airtight container for up to a week or freezer for up to 3 months.

How do you get the chips to melt without adding any liquid? I put in a full teaspoon of the American dream nut butter and it still wouldn’t melt well. I had to add more than a tablespoon of light margarine. That really jacked the calories and macros up, unfortunately.

I’m so sad about the whipped peanut butters being discontinued!!! I loved Jif and then moved to Peter Pan and have had trouble finding it lately. Now I know why....what’s the deal with these companies?
