Lightened Up Coleslaw Macaroni Salad 

This Lightened Up Coleslaw Macaroni Salad is an easy summer side dish that combines two favorite summer salads: coleslaw and macaroni salad-packed with pasta, coleslaw, celery, diced apples-this is an easy and delicious dish to take to a potluck or your next BBQ!

Summertime is the perfect time to get your BBQ on. But what if you’re looking for a side dish that’s light, but still packs in all the deliciousness of coleslaw and macaroni salad?

Well, look no further than this Lightened Up Coleslaw Macaroni Salad. It’s an easy summer side dish that combines two favorite summer salads: coleslaw and macaroni salad. 

Packed with pasta, coleslaw, celery, diced apples, and plenty of mayonnaise and mustard to give it that traditional taste we love so much. This dish is sure to be the star of any potluck or BBQ.

What ingredients do I need to make this Lightened Up Coleslaw Macaroni Salad?

  • Dry short pasta-such as: ditalini, elbow macaroni, small bow tie pasta, small penne or any other shape. You can use gluten-free pasta, for a gluten-free option.
  • Coleslaw mix– this comes in a package and is near the prepackaged salads at most grocery stores.
  • Scallions-finely chopped.
  • Celery –finely chopped. For flavor and crunch.
  • Apple-finely chopped. This gives the pasta salad a nice crunch and sweetness.

Dressing Ingredients: 

  • Non fat plain Greek yogurt – used for the base of the dressing. Even if you aren’t a huge Greek yogurt fan-I highly recommend it-you won’t even be able to taste the yogurt- the Light Kraft mayo, sweetener, and apple cider vinegar masks the taste of the yogurt.
  • Light Kraft mayo – used for the base of the dressing.
  • Zero Point white granulated sweetener – I use Lakanto Classic Monkfruit. Save 20% on all non sale items using POUND20. Order HERE. Keep in mind-Lakanto monk fruit sweetener has a 1:1 ratio to regular sugar. If you use a different sweetener be sure to use the conversion for regular sugar.
  • Apple cider vinegar
  • Salt
  • Black Pepper

How do I make this Lightened Up Coleslaw Macaroni Salad?

Cook pasta in a large pot according to package directions.
Drain and rinse pasta in cold water.
Transfer to a large serving bowl. Add coleslaw mix, onion, celery, and chopped apple.


In a small bowl, whisk together the dressing ingredients.

Pour dressing over salad.

Toss until well combined.

Cover and refrigerate for at least two hours before serving.

  • 1  (14 oz.) package coleslaw mix
  • 2 medium scallions, finely chopped
  • 3 celery ribs, finely chopped
  • 1 medium apple, chopped

Dressing Ingredients: 

  • 3/4 cup non fat plain Greek yogurt 
  • 1/2 cup Light Kraft mayo 
  • 1/4 cup white granulated sweetener – I use Lakanto classic monkfruit
  • 1/4 cup apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Additional optional ingredients:

  • 1 medium green peppers, diced
  • 1/2 medium English cucumber, finely sliced 
  • 1 medium zucchini, finely chopped 
  • 1 (8 oz.) can water chestnuts, drained and chopped

Directions:

  1. Cook pasta according to package instructions. Drain and rinse with cold water.
  2. Transfer to a large serving bowl; add the coleslaw mix, scallions, celery, and apple.
  3. In a small bowl, whisk together the dressing ingredients. Pour dressing over salad. Toss until well combined.
  4. Cover and refrigerate for at least two hours before serving. Enjoy!
  5. Store leftovers in the refrigerator in an airtight container for 3 to 5 days.

Author Notes:

  • This salad needs to chill in the fridge for at least two hours to allow the ingredients to marinate. 
  • Keep in mind the vegetables and pasta will absorb some of the sauce and its flavor. 
  • The Lakanto monk fruit sweetener has a 1:1 ratio to regular sugar. If you use a different sweetener be sure to use the conversion for regular sugar.
