Rice pudding is a dish made from rice mixed with water or milk and other ingredients such as cinnamon and raisins. It can be served as a sweet breakfast, midday snack, or an easy dessert.
What ingredients do I need to make this Lightened Up Rice Pudding?
This is a simple to make and requires just a few ingredient. Here’s the list of ingredients that you will need:
- Water
- Long grain white or brown rice -uncooked, not instant. I usually make my rice in a rice cooker, but I added directions for making it on the stove.
- Egg- slightly beaten
- Skim milk or unsweetened almond milk- I use skim milk for more creamy texture
- Salt
- Zero Point white granulated or brown sugar substitute- I use Lakanto Golden Monkfruit Sweetener
- Vanilla extract
- Raisins- these are optional. They add a sweetness and nice chewy texture to this rice pudding. You may use golden raisins, craisins, or regular raisins.
- Cinnamon or nutmeg for garnish
How do I make this Lightened Up Rice Pudding?
The rice can be cooked in a rice cooker or on the stove.
For stove top directions: combine water and rice over high heat in a saucepan and bring to a boil.
Reduce heat to medium low, cover, and simmer until tender, for about 40 minutes.
In a different saucepan combine cooked rice, 1 1/2 cups skim milk or unsweetened almond milk, sugar substitute, and salt.
Cook over medium heat until it thickens, 15 to 20 minutes.
Add remaining 1/2 cup skim or unsweetened almond milk
and beaten egg. Stir until well combined.
Cook for another 2 minutes, stirring constantly. Remove from heat and stir in vanilla extract.
Sprinkle or stir in 1/3 cup raisins, cinnamon or nutmeg, if desired.
Can this Lightened Up Rice Pudding be made in the Instant Pot?
Yes. It sure can.
Instant Pot Directions:
- Combine rice, water, and sugar substitute into the Instant Pot.
- Press “sauté” and bring to a boil. Cover with the lid and switch to “seal” position
- Press the “rice” button on the instant pot or use the Pressure Cook function on the Instant Pot and adjust to low pressure. Set cooking time for 16 minutes.
- After cooking, press “cancel” and let the rice pudding sit for 15-20 minutes. Meanwhile, in a medium mixing bowl, combine the egg, milk, vanilla, and salt.
- After the 15-20 minutes is complete-do a quick release, and remove the lid.
- Stir in the egg & milk mixture and continue stirring until well combined.
- Press “saute” and bring the mixture to another boil. Then stir, turn off instant pot.
- Sprinkle or stir in 1/3 cup raisins, cinnamon or nutmeg, if desired.
Serve warm or at room temperature.
