This Lightened Up Slow Cooker Cheesy Kielbasa Hash Brown Casserole recipe is so simple. All you need to do is place all ingredients into your slow cooker and mix together! It’s creamy, cheesy, and irresistibly delicious! This easy breakfast casserole can be enjoyed for breakfast, brunch, or as a side dish for dinner!

But don’t worry, we’ve covered you with these easy casserole recipe! This slow cooker recipe only requires a few simple ingredients and is perfect for feeding the whole family. Just throw the ingredients into the slow cooker, and you’ll have breakfast or dinner ready to go! Perfect for a cold winters day!

What ingredient do I need to make this Lightened Up Slow Cooker Cheesy Kielbasa Hash Brown Casserole?

  • Hash browns– I like to use the southern style cubed hash browns. You could use either shredded or cubed hash browns. If you don’t want to use prepackaged hash browns or have potatoes as a zero point food-you can use fresh potatoes. Just peel and cube. 
  • Turkey Kielbasa-cut into small pieces or halved. I like to useHillshire Farm Turkey polska kielbasa
  • Onion-diced
  • Reduced fat shredded cheese
  • Healthy request cream of chicken soup
  • Unsweetened almond milk – you could substitute this for any milk- keep in mind the point values will vary depending on which milk you use. 
  • Fresh parsley-chopped, for optional garnish.

Can I use a homemade cream of chicken soup in this recipe?  

Yes, you sure can! Here’s a lightened up cream of chicken soup recipe that you can use in place of the can of cream of chicken soup.

Homemade lightened up cream of chicken 

  • 1 Tbsp light butter- I love using Land O ‘ Lakes light butter made with canola oil
  • 2 Tbsp all purpose or gluten-free flour 
  • 1 cup water
  • 1 cup unsweetened almond milk
  • 2 tsp chicken bouillon power or paste 
  • 1/2 tsp dry thyme
  • 1/2 tsp poultry seasoning
  • salt & pepper to taste

How to make homemade cream of chicken soup: 

  1. Melt light butter in a small saucepan over low heat. Add flour and whisk until flour is well combined. Cook 1 minute. Stir in water and whisk until lumps have dissolved. 
  2. Simmer until thick, then stir in unsweetened almond milk and chicken bouillon power or paste and poultry seasonings. 
  3. Continue cooking until the sauce thickens. Remove from heat and pour over hash brown casserole.
  4. Note: Since you are using unsweetened almond milk-you DO NOT need to add an additional cup if using this homemade chicken soup recipe.

How do I make this Lightened Up Slow Cooker Cheesy Kielbasa Hash Brown Casserole?

Spray a slow cooker with non stick cooking spray. 
Combine hash browns, kielbasa, onion, and cheese in the slow cooker pot. 

In a small mixing bowl combine the cream of chicken soup with unsweetened almond milk. Whisk until well combined. * note: if you are using the homemade cream of chicken soup-you will not need to add the additional cup of unsweetened almond milk.


Pour cream of chicken mixture over hash brown mix. 

Stir until well combined.

Cover and cook on high for 3 hours.

Remove lid.

Garnish with fresh chopped parsley, if desired.

Stir and enjoy!

Store leftovers in an airtight container in the fridge for up to a week or freeze for up to three months.

  • 14 oz. turkey kielbasa, cut into small pieces or halved.
  • 1 small onion, diced
  • 3/4 cup 50% reduced fat shredded cheese
  • 1 ( 10.5 oz.) can healthy request cream of chicken soup or homemade cream of chicken soup
  • 1 cup unsweetened almond or cashew milk  
  • Fresh parsley, chopped, optional garnish

Directions: 

  1. Spray a slow cooker with non stick cooking spray. 
  2. Combine hash browns, kielbasa, onion, and cheese in the slow cooker pot. 
  3. In a small mixing bowl combine the cream of chicken soup with unsweetened almond milk. Whisk until well combined. * note: if you are using the homemade cream of chicken soup-you will not need to add the additional cup of unsweetened almond milk.
