These Low-carb chicken Nuggets are a flavorful, guilt-free alternative to the classic fast-food favorite, perfect for those following Weight Watchers, keto or on a low-carb diet. Made with tender, bite-sized pieces of chicken breast, these nuggets are coated in a crunchy, grain-free breading!

Baked or air-fried until golden and crispy, they deliver all the satisfying texture and savory taste of regular nuggets without the excess carbs. Whether served with sugar-free dipping sauces or alongside a fresh salad, low-carb chicken nuggets make a delicious, protein-packed meal or snack that doesn’t compromise on flavor!

You may have never thought about making low carb chicken nuggets-but let me tell you-these hit the spot when you’re wanting to boost your daily protein intake! These are made with just a few simple ingredients and will satisfy your appetite!

What ingredients do I need to make these Low Carb Chicken Nuggets?

  • Canned chicken breast- drain well. I like to use Kirkland canned chicken. Be sure to drain and pat the chicken dry as much as you can. The less moister the chicken nuggets have the more crispy they will be.
  • Large egg– used as a binding agent.
  • Reduced fat part-skim mozzarella-help make the nuggets crispy and add flavor.
  • Salt and pepper- to taste 
  • Garlic powder- to taste 

How do I make these Low Carb Chicken Nuggets?
These low carb chicken nuggets can be cooked in the air fryer or in the oven. Here is a step by step directions for cooking in the air fryer.

First you will drain the water from the canned chicken-try your best to get all the moisture out of the chicken. The less moister the chicken nuggets have the more crispy they will be.

In a medium bowl combine drained chicken breast, egg, cheese, and seasoning. Mix until well combined. 

Scoop 2 tablespoons for each nugget. Slightly flatten into nuggets. 

Place nuggets on parchment paper in the air fryer. Spray the top of the chicken nuggets with non stick cooking spray.

Air fry at 400 degrees for 15 minutes, flipping halfway through. Be sure to spray the other side of the chicken nuggets with non stick cooking spray.

Serve with your favorite dipping sauce.

We like to dip ours in either sugar free ketchup or our skinny ranch dip.
