With Easter just around the corner-how about making a fun and tasty treat to enjoy this Easter season? Here’s a fun Easter recipe that will surely delight both kids and adults, and something you can make together without having to go near the oven!

These “No-Bake Peanut Butter Chocolate Egg Nest Cookies” are a healthier alternative to the standard, everyday, peanut butter chocolate cookie. For this recipe, I use sugar-free chocolate chips, nut butter, cereal, and chocolate eggs or jelly beans. Just follow the recipe below and you’ll see how just how simple these are to make!

What ingredients do I need to make these No-Bake Peanut Butter Chocolate Egg Nest Cookies?

  • Sugar free milk chocolate chips- I use Choczero or Lily’s sugar free milk chocolate chips. I like to use ChocZero milk chocolate chips. You can find these online HERE. Save 10% on your order with promo code: POUNDDROPPER or use Lily’s milk chocolate chips-which can be found on Amazon HERE
  • Low point nut butter– I use Better N’Peanut Butter which you can buy in a 3-pack HERE on Amazon.
  • Cornflakes or Fiber One Cereal- these can be made with corn flakes or fiber one cereal. The fiber one cereal is higher in fiber but are a bit higher in points. 
  • Cadbury mini chocolate eggs, M&Ms, or Jelly Beans-you could use mini Cadbury eggs, jelly beans or it would be super cute to stick a Peep in the nest, if you desired. The M&M’s and jelly beans are less points than the mini Cadbury eggs-which would make the cookies lower in points.

How do I make these No-Bake Peanut Butter Chocolate Egg Nest Cookies?

In a large microwave safe bowl, melt chocolate chips and low point nut butter together in microwave, stirring every 30 seconds.
Stir in cornflakes or fiber one cereal. 

Spray a regular size muffin tin with nonstick cooking spray.
Using a 1/4 cup scoop mixture into muffin tins and mold into nest shapes-use a spoon to make a thumbprint in the middle for the eggs to go.
Place three Cadbury eggs, m&m’s, or jelly beans into each nest. 

Let the cookies set for 30 minutes on the counter or place in the refrigerator for 20 minutes to set quicker. 

Store leftovers in an airtight container on the counter for up to 4 days.

  • 6 Tbsp low point nut butter- I use American Dream Nut Butter  cinnamon toasties or Better N' Peanut Butter
  • 4 cups cornflakes or Fiber One cereal 
  • 36 Cadbury mini chocolate eggs, peanut M&Ms, or Jelly Beans.
