What is Caprese Chicken?
The meaning of “Caprese” is a salad consisting of slices of mozzarella and tomatoes, basil, and olive oil balsamic vinegar or Italian dressing. This Caprese Chicken is an Italian-inspired chicken dish made with the following ingredients: chicken, tomatoes, fresh mozzarella, olive oil, and balsamic vinegar.
What’s not to love about fresh mozzarella, ripe tomatoes, fresh basil, and a drizzle of olive oil and balsamic vinegar – Now, add juicy flavorful chicken breasts-it’s absolutely divine!
What ingredients do I need to make this One Pan Caprese Chicken?
- Thinly sliced, boneless skinless chicken breast-Slicing the chicken breasts into thinner pieces allows it to cook more quickly.
- Olive oil-helps brown the chicken
- Fresh lemon juice-for flavor- tenderizes the chicken.
- Balsamic vinegar-for flavor.
- Kosher salt, to taste.
- Black pepper, to taste.
- Cherry tomatoes-you can cut these in half or leave them whole.
- Fresh mozzarella cheese-sliced
- Thinly sliced fresh basil-for garnish
- Balsamic glaze-optional for garnish
How do I make this One Pan Caprese Chicken?
Preheat the oven to 400 degrees.
In a large bowl, whisk together the lemon juice, vinegar, olive oil, and chicken, salt, and pepper and toss to coat.
(I recommend patting the chicken pieces dry with a paper towel before adding them to the bowl)
Spray a large oven proof skillet or cast iron skillet with non stick cooking spray and heat over medium high heat.
Add the chicken and sear for 3-4 minutes, until browned, then flip the chicken and sear for an additional 3-4 minutes, until browned.
Turn off stove.
Add the tomatoes to the pan.
Top each chicken breast with 1 ounce mozzarella cheese slice.
Bake for about 10-12 minutes, or until the cheese is bubbly and the chicken is fully cooked.
Remove from oven and garnish with chopped basil and balsamic glaze, if desired.
Store leftovers in an airtight container in the fridge for 3-4 days. To reheat, warm in the oven or on low in a skillet until heated through.
