One Point Chocolate Fudge

One Point Chocolate Fudge makes for an amazing guilt free holiday treat! This easy recipe tastes so decadent, no one will ever believe it’s WW friendly!

Servings: Makes 24 servings

GREEN: 1 Smartpoints for 1 serving or 3 SmartPoints for 2 servings

BLUE:  1 Smartpoints for 1 serving or 3 SmartPoints for 2 servings

PURPLE:  1 Smartpoints for 1 serving or 3 SmartPoints for 2 servings

 

How do I make this One Point Chocolate Fudge? 

Preheat oven to 350 degrees. Spray a 8×8 baking dish with non stick cooking spray.

In a large mixing bowl combine, brownie mix, unsweetened applesauce.

Mix until smooth.

Pour batter into prepared baking dish.

Bake for 30-35 minutes or until edges are slightly firm. Remove from oven.

Let it cool for 5-10 minutes before spreading the melted frosting on top.

Meanwhile, melt 2 Tbsp sugar free chocolate frosting in the microwave for 15-20 seconds. Stir until smooth.

Pour melted chocolate frosting over the cooled fudge. 

Using a spatula spread evenly over fudge. 

Sprinkle the top with sprinkles. 

Let it sit on the counter for at least four hours.

Do not chill in the fridge until it’s been completely cooled; otherwise water condensation will form on the top. 

Chill in the refrigerator for at least 2 hours before cutting into it.

Use a knife to cut into 24 fudge bites.

You can make your own sugar free cake mix using either of these options: (The point value would the same)

Another option would be:

  • 1 and 3/4 cup all purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup Lakanto Monkfruit white granulated sugar substitute or whatever the conversion is for 1 cup regular sugar
  1. The Lakanto Monkfruit Sweetener (sugar substitute) that is used in this recipe is zero points. Please keep in mind-the point value can vary depending on the brand of sugar substitute you choose to use.  Lakanto Monkfruit Sweetener also has a 1:1 ratio to real sugar. If you use a different sugar substitute you will want to use the equivalent to real sugar that is recommended on back of the sugar substitute package.

  • 1 1/2 cups unsweetened applesauce sauce 
  • 2 Tbsp Pillsbury sugar free chocolate frosting 
  • Sprinkles (optional)

I tasted the batter and thought it was very “apple-y” so I added 1/4 tsp mint extract. Voila! Mint chocolate fudge. In the oven now...can’t wait to see how it turns out!

I cannot eat apples or applesauce. Can mashed bananas or canned pumpkin be substituted?

Yes, you can substitute the unsweetened applesauce for 2 cups canned pumpkin puree. That would work just as well.
