One Pot Creamy Spinach Artichoke Chicken

This One Pot Creamy Spinach Artichoke Chicken is a restaurant worthy dish-made with thinly sliced chicken breasts that are seared to a golden brown and then smothered in a lightened up creamy decadent sauce! This one pan, WW and low carb friendly dish comes together in just 30 minutes-making it the perfect busy weeknight meal!

For those nights when you don’t have time to whip up an elaborate dinner, this One Pot Creamy Spinach Artichoke Chicken is your savior! This dish is easy to make, super delicious, and sure to impress anyone who tries it. 

Thinly sliced chicken breasts are seared to a golden brown for added depth of flavor and then smothered in a creamy decadent sauce with spinach and artichoke hearts. This protein-packed 30-minute meal is perfect for busy weeknights or any night you want to eat at home on the couch watching Netflix & chill.

What ingredients do I need to make this One Pot Creamy Spinach Artichoke Chicken?

  • Boneless, skinless chicken breasts– cut into thin cutlets. Pound the chicken breasts so they are similar in thickness. It’s important to have the chicken pieces be similar in size so they will cook evenly.
  • All-purpose flour- you could also use gluten-free flour, or almond flour for a low carb option. Note: Coating the chicken cutlets in flour before searing gives the chicken dramatic browning.
  • Olive oil- I only use one teaspoon plus olive oil cooking spray gives the flour covered chicken cutlets the golden brown coloring. 
  • Fresh baby spinach– chopped. You could use frozen spinach-be sure to let it thaw completely and then drain any liquid before adding it to the skillet.
  • Artichoke hearts in water– drained and quartered
  • Parsley– fresh and chopped 
  • Garlic– minced 
  • Light butter- I use I can’t believe it’s not butter, Smart Balance, or Land O’ Lakes light butter made with canola oil
  • Low sodium chicken broth
  • Light sour cream or non fat plain yogurt – either one will work, the point value will vary depending on which one you use.
  • Light cream cream cheese- room temperature. 
  • Grated Parmesan– I use the fresh grated Parmesan that you find in the container near the deli.
  • Kosher salt and freshly ground black pepper– to taste

Can I freeze this One Pot Meal?

Yes, you can freeze this, just a fair warning: the texture of the light cream cheese and sour cream base can be slightly affected, making the frozen and re-heated chicken and sauce a little less silky smooth than when freshly made.

How do I make this One Pot Creamy Spinach Artichoke Chicken?

Season with salt and pepper and toss in flour to coat, shaking off any excess flour.

Place the floured covered chicken cutlets into the hot skillet.

Brown the chicken on both sides until cooked through and golden brown, 5-8 minutes per side. If needed, spray the top of the chicken with non stick cooking spray so the top and bottom of the chicken becomes golden brown.

Remove chicken cutlets from heat and set aside on a plate.

Add light butter to skillet. Stir in parsley and garlic and cook until garlic is fragrant, about 30 seconds.

Add chicken broth, scraping up any browned bits from the bottom of the pan. 

Stir in light cream cheese and light sour cream or non fat plain yogurt. 

Whisk until smooth and melted. 

Stir in parmesan and season with salt and pepper.

Stir in spinach and artichokes

Stir until spinach is wilted.

Return chicken to skillet and spoon sauce over the top until chicken. 

Reduce heat and cook for another 2 minutes until sauce is covering the chicken.

Remove from heat.

  • 1/4 cup all-purpose flour, gluten-free, or almond flour
  • 1 tsp olive oil
  • 2 cups fresh baby spinach, chopped
  • 1 (14 oz) can artichoke hearts in water, drained and quartered
  • 2 Tbsp parsley, fresh and chopped 
  • 4 cloves garlic, minced 
  • 2 Tbsp light butter- I use I can’t believe it’s not butter, Smart Balance, or Land O’ Lakes light butter made with canola oil
  • 1/2 cup low sodium chicken broth
  • 1/2 cup light sour cream or non fat plain yogurt 
  • 4 oz. light cream cream cheese, room temperature

How would fat free Greek yogurt work instead of sour cream?

I made this and it was delicious. I didn’t realize I had jumped to the recipe and made it but I never saw where it said to remove the chicken so I added everything with the chicken inside so next time I’ll remove it but you might want to fix your recipe that you print out. It was great though.

I made this for Sunday dinner for my husband & me and had also invited a friend. I warned her she was going to be a "guinea pig". OMG!!! I wasn't prepared for a fine dining quality meal. Very impressive blend of flavors. The one thing I added was some additional broth to thin out the sauce which got too thick on me. I have a serving leftover for tonite's dinner...woo-hoo! Thank you for this amazing recipe!
