What ingredients do I need to make this Protein Belgium Waffle For One?

  •  Kodiak Cakes Buttermilk Flapjack & Waffle Mix,. If you wanted a gluten free option you could use:King Arthur Flour KING ARTHUR FLOUR Gluten Free Pancake Mix which is higher in points. You may swap out 1/4 cup of the Kodiak for 1/4 cup protein powder to increase the amount of protein. I love using Clean Simple Eats protein powder. It is packed with 20 grams of protein, 100 calories, and just 1 PersonalPoint per scoop (points may vary depending on the flavor)
  • One large egg or 2 egg whites
  • Water or unsweetened almond milk, soy milk, or unsweetened coconut milk
  • Vanilla extract

What waffle iron do you recommend?

Any Belgium waffle iron will work for this recipe. However, I recently discovered THIS Belgium Waffle iron from Amazon-and I absolutely LOVE it- SO if you’re in the market for a new one, or don’t have a Belgium waffle iron- may I suggest this one HERE!

It makes the perfect 1″ thick waffles and has a non stick coating & removeable drip tray for easy clean Up, a browning control dial, and is available in stainless steel.

 

How do I make this Protein Belgium Waffle For One?

Preheat waffle iron. Spray waffle iron with non stick cooking spray.
In a small mixing bowl whisk egg or egg whites until fluffy. Add the unsweetened almond milk, and vanilla. Mix well.

Whisk in pancake mix and continue mixing until JUST-combined. It’s totally normal to have little chunks for mix throughout it. 

Do not overmix-otherwise the texture of the waffle with be dry and dense.

Pour the batter on the iron and close the lid. Depending on the size of your waffle maker, you might have too much batter or not enough.

Be sure t0 adjust accordingly.

Cook waffle until the waffle iron’s indicator light shows that cooking is complete.

The waffle should be golden brown and crispy on the outside. 

Use a fork or utensil to remove the waffle from the waffle iron. Serve with your favorite toppings!
