Protein Lemon Mousse with Blueberries

This Protein Lemon Mousse with Blueberries makes for a high protein, low-calorie dessert. An easy healthy dessert that tastes ridiculously delicious! You won’t believe it when I tell you these are made with blended cottage cheese. A perfect dessert for a hot summer day!

I love looking for new ways to add more protein to my diet. Whether it’s from my Protein Brownie Batter Oatmeal Bake for breakfast or my Protein Bites  or Homemade Chocolate Pudding made with cottage cheese for a snack, or my Cottage Cheese Ice Cream for dessert-I’m all about the protein! I love adding the blended cottage cheese to this mousse- it makes it so creamy and adds the additional protein!

That’s why I love this Protein Lemon Mousse with Blueberries! It’s packed with 22 grams of protein and comes together in just five minutes-how can you ask for anything better? Oh, and it’s delicious, creamy!

What ingredients do I need to make this Protein Lemon Mousse with Blueberries?

  • Low fat cottage cheese– I love the Good Culture cottage cheese. I’m not a huge cottage cheese fan but I truly love this brand of cottage cheese. It’s thick and creamy and tastes so good! Be sure to use an ultra powdered blender to blend the cottage cheese. You want the cottage cheese to be as smooth as the consistency of yogurt.
  • Premier Protein lemon bar or vanilla shake- the Premier Protein Lemon Bar shake is seasonal so if you can’t find it, you’ll want to use the vanilla. I get the Premier Protein Lemon Bar from Sam’s club or Walmart. If you didn’t want to use a pre-made shake you could sub it for the Fairlife skim milk, which has 13 grams of protein per cup.
  • Sugar free cheesecake or lemon pudding mix – you could use either flavor. However; if you’re using a vanilla shake I recommend using the lemon pudding to give the mousse that lemon flavor. You can use the regular pudding if you’re not a fan of the sugar free stuff. Keep in mind, the point values will vary!
  • Fresh lemon juice-for fresh lemon flavor.
  • Lemon zest– add flavor!
  • Fresh blueberries– for garnish

How do I make this Protein Lemon Mousse with Blueberries?

In a high-speed blender or food processor, combine cottage cheese, lemon juice, and lemon zest.

Blend for 40-60 seconds until completely smooth.

If it looks like the picture below blend it a little more until it has a consistency of yogurt.

(This is what it looks like if you don’t blend it enough.)

I usually blend it for 60 seconds to ensure a smooth consistency.

In a medium mixing bowl combine the premier lemon protein shake and pudding mix.

Whisk until smooth. 

Add the cottage cheese mixture to the pudding mixture.

Whisk until well combined.

Divide mixture between 4 ramekin cups.

Refrigerate for at least 20 minutes before serving. 

Top with blueberries when ready to serve!

Store leftovers in the fridge for up to 3 days.

Ingredients

  • 1 (16 oz.) container cottage cheese- you can use fat free, 1 % or 2% low fat cottage cheese.
  • 1 ( 11.5 oz.) bottle of Premier Protein Lemon Bar or Vanilla Shake or 2 cups Fairlife skim Milk
  • 1 (1 oz.) box sugar free cheesecake or lemon pudding mix 
  • Fresh lemon juice from 1 lemon
  • 2 tsp lemon zest
  • 1/3 cup fresh blueberries

Instructions

    1. In a high-speed blender or food processor, combine cottage cheese, lemon juice, and lemon zest.
    2. Blend for 40-60 seconds until completely smooth. Be sure to blend to the consistency of yogurt. You don't want any lumps or chunks.
    3. In a medium mixing bowl combine the premier lemon protein shake and pudding mix. Whisk until smooth. 
    4. Add the cottage cheese mixture to the pudding mixture. Whisk until well combined.
    5. Divide mixture between four 6 oz. ramekin cups and refrigerate for at least 20 minutes before serving. 
    6. Top with blueberries when ready to serve!
