What ingredients do I need to make this Protein Packed Brownie Batter Oatmeal Bake?

  • Rolled or old fashioned oats– do not use quick oats. The quick oats will cook too fast and won’t hold up.

  • Baking powder
  • Unsweetened almond or coconut milk
  • Premium Baking Cocoa, 100% Unsweetened cocoa powder
  • Salt
  • Cinnamon

How do I make this Protein Packed Brownie Batter Oatmeal Bake?

Preheat your oven to 350 degrees. Spray a 8×8-inch or 2-quart baking pan with nonstick cooking spray. Set aside. 

In a large bowl combine all ingredients (except chocolate chips).

Stir until well combined.

Pour batter into the prepared pan. 

Bake for about 45 minutes or until the center is set. Remove from oven. 

Sprinkle no sugar added chocolate chips on top of the warm baked oatmeal, if desired. 

Serve warm or at room temperature.

Store leftovers in an airtight container in the refrigerator for up to a week.

  • 1 tsp cinnamon
  • 3/4 cup zero point brown sugar sweetener- I use Lakanto Monkfruit BROWN sweetener
  • 3 lightly beaten whole eggs or 9 Tbsp of liquid eggs
  • 3/4 cup non fat plain or Greek yogurt
  • 1 tsp vanilla or almond extract
  • 60 no sugar added chocolate chips or 14 grams. I like to use the no sugar added Choczero milk or peanut butter chocolate chips.

I love this recipe! It reminds me of a fudgy brownie. It is surprisingly filling. The only thing I would do differently is to not add chocolate chips. I don't think they added anything. Otherwise, this was a winner.

Hi! I just made the Protein-Packed Brownie Batter Oatmeal Bake and used 2 Cups of quick oats instead of old-fashioned oats, 5 Tbsp PB & Me Chocolate powdered peanut butter instead of protein powder, added 5 Tbsp of Kodiak mix and 3 Tbsp walnuts, used a few less Lily's chocolate chips (32) and 2/3 Cup brown sugar Swerve. It's an amazing brownie-like baked oatmeal breakfast/dessert! Divided into 8 as I have an 8-piece silicone scone pan that this is perfect for. Makes 8 large, filling pieces, 3PP for me (0pt ffgy,eggs) Baked for 40 minutes. Thank you!
