Our family has been wanting and eating a lot of Mexican food lately! We just can’t seem to get enough of it! We love making these tostadas because they are so simple and extremely delicious! Our entire family loves them! These tostadas are super versatile; so they can be customized to everyone’s taste preference! Feel free to add your favorite protein and whatever toppings you like. These tostadas are the perfect quick and easy meal!
What are Tostadas?
Tostada” is Spanish for “toasted” and is the name of a Mexican dish that is served on a toasted or deep fried corn tortilla. The name usually refers to a flat or bowl-shaped tortilla that is deep-fried or toasted, but may also refer to any dish using a tostada as a base.
What ingredients do I need to make these Quick and Easy Tostadas?
- Lean ground beef-I use 96% Laura’s Lean Ground Beef. You could also use ground turkey, ground chicken, grilled chicken, or omit the beef altogether for a vegetarian option.
- Taco seasoning-for the ground beef or turkey.
- Fat free refried beans-canned. I recommend warming them up in microwave so they are easy to spread onto the tostada.
- Reduced fat cheddar cheese– shredded.
- Corn Tostadas- you can find these at most grocery stores near the taco shells.
- Roma tomatoes- finely diced, for garnish. You could swap the tomatoes for your favorite salsa.
- Non fat sour cream or non fat plain Greek yogurt-for garnish
- Cilantro- chopped for garnish
How do I make these Quick and Easy Beef and Bean Tostadas?
Spray a large skillet with non stick cooking spray. Hear skillet over medium heat and add ground beef. Cook until completely brown, then stir in taco seasoning and water.
Cook ground beef until most of the water has evaporated. Heat refried beans in microwave safe bowl.
To assemble, place tostadas on to a serving platter.
Spread about 3 Tbsp refried beans onto each tostada.
Add 2 oz. ground beef onto beans and press into the beans to help it stick.
Top with one tablespoon of cheese.
Then garnish with your favorite topping such as: diced tomato, non fat plain Greek yogurt or sour cream and cilantro.
Serve immediately.
