Slow Cooker Lightened Up Pumpkin Spice Cake 

This slow cooker lightened up pumpkin cake is the perfect cozy dessert for fall and the holiday season—warm, spiced, and incredibly easy to make!

With just a few simple ingredients like pumpkin purée, kodiak pancake mix or flour, eggs, and classic spices like cinnamon and pumpkin pie spice, this recipe comes together in minutes and then bakes to perfection right in your slow cooker. What ingredients do I need to make this slow cooker lightened up pumpkin cake?

  • All-purpose flour-or you could also use Kodiak Cakes Pancake Mix or gluten free flour, if preferred.
  • White granulated sweetener – to sweeten the cake. I use Lakanto white granulated sweetener.
  • Baking powder– makes the cake rise. You will omit 1 tsp if you use Kodiak Cakes Buttermilk Mix
  • Pumpkin pie spice- for flavor.
  • Cinnamon-for additional flavor.
  • Pumpkin puree – canned. 100% pumpkin puree.
  • Milk of your choice – I love using Fairlife skim milk for the added protein.
  • Light butter-melted. The butter gives the cake a nice creamy flavor and caramelizes the top of the cake. I like to use Land O’Lakes light butter made with canola oil.
  • Vanilla extract– for flavor.

How do I make this slow cooker lightened up pumpkin cake?

Spray a slow cooker with non stick cooking spray. 

In a medium bowl, combine flour, sweetener, baking powder, pumpkin spice, and cinnamon.

Mix until combined. 

In another bowl, combine pumpkin puree, milk, and vanilla extract.

Whisk until well blended. 

Combine the wet into the dry ingredients.

Mix until just combined.

Pour batter into prepared slow cooker. Pour melted butter over the top of the cake batter. 

Cook on HIGH for 1 ½  to 2 hours, or until the center is done.  Keep in mind: every slow-cooker is different so check on your cobbler every 30 minutes.

Let cool for 10-15 minutes before serving. 

Serve with fat free whipped cream or low calorie vanilla ice cream, of desired.

Store and leftovers in an airtight container in the refrigerator for up to 3 days. Rewarm in the microwave for a minute
