Tex-Mex Pasta Chicken Salad 

This Tex-Mex Pasta Chicken Salad  is an easy and delicious pasta salad packed with pasta, cooked chicken, black beans, corn, tomatoes, cilantro, red onion, and topped with a creamy, spicy, flavorful dressing. Perfect for your next BBQ or summer picnic!

We’ve got a recipe that’s perfect for your next family gathering, BBQ or picnic—it’s a no-brainer, and it’s super easy to make plus a cinch to transport. And did I mention it’s also super delicious?

It’s a Tex-Mex Pasta Chicken Salad—a pasta salad packed with pasta, cooked chicken, black beans, corn, tomatoes, cilantro, red onion, and topped with a creamy, spicy, flavorful dressing. It’s perfect for any occasion but is particularly awesome for Cinco de Mayo or any time you want something that feels like the south of the border!

This recipe is one of my favorites to use during the summer—it takes just a few minutes to put together and doesn’t require too many ingredients. Plus, it’s always a huge hit at parties!

What ingredients do I need to make this Tex-Mex Pasta Chicken Salad? 

  • Dry short pasta- such as: cellentani ,bowtie, penne, rotini, shells, or elbow. You can use whole grain pasta, if desired. You could use gluten-free pasta, for a gluten-free option.
  • Cooked rotisserie chicken 
  • Back beans- canned, drained and rinsed
  • Frozen (or fresh) corn- thawed
  • Cherry tomatoes– halved  
  • Red onion-diced 
  • Cilantro- chopped
  • Avocado-diced, this optional

Dressing Ingredients:

  • Non fat plain Greek yogurt
  • Light Kraft mayonnaise
  • Lime juice- from 1 lime
  • Ground cumin
  • salt
  • Chili powder
  • Smoked paprika

How do you make this Tex-Mex Pasta Chicken Salad? 

Cook pasta according to package instructions.

Drain and rinse with cold water.


Whisk yogurt and light mayo in a large mixing bowl. Add lime juice, cumin, salt, chili powder and smoked paprika.

Whisk until well combined.


In a large serving bowl combine the cooled pasta, cooked chicken, black beans, corn, tomatoes, red onion, and cilantro. Stir to combine.

Stir in the dressing and mix until well combined.

Cover and let it chill in the fridge for at least one hour.

Garnish with diced avocado and more cilantro. 

Ingredients:

  • 10 oz. dry short pasta such as; bowtie, penne, rotini, cellentani, shells, or elbow. You can substitute for whole grain pasta, if desired.
  • 2 cup cooked rotisserie chicken 
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 cup frozen (or fresh) corn, thawed
  • 1 cup cherry tomatoes, halved  
  • ¼ cup red onion, diced 
  • ½ cup cilantro, chopped
  • 1 small avocado, diced. This is optional

Dressing Ingredients:

  • 1/2 cup non fat plain Greek yogurt
  • 1/4 cup Light Kraft mayonnaise
  • Lime juice, from 1 lime
  • 1 Tbsp ground cumin
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp smoked paprika

Directions:

  1. Cook pasta according to package instructions. Drain and rinse with cold water.

  5. Garnish with diced avocado and more cilantro. Store leftovers in an airtight container in the fridge for up to a week.
