This Tex Mex Tater Tot Casserole is my absolute favorite tater tot recipe. I love everything, from the juicy and flavorful lean ground beef to the black beans, corn, and green chilies, topped with crispy tater tots.
This is perfect comfort food at its finest, and I swear on everything that it is on repeat at our house year-round. And if you know me, then you know how much I love quick comfort foods! The best part about this recipe is that it takes less than an hour from start to finish, so it’s perfect for those busy weeknights when we all need a little extra fuel in our tank from one day to the next!
What ingredients do I need to make this Tex Mex Tater Tot Casserole?
- Lean ground beef– I like to use 96% Laura’s Lean ground beef. You could also use ground turkey or chicken, if you desire.
- Onion-diced
- Taco seasoning
- Green chiles-not drained.
- Crushed or diced tomatoes– not drained.
- Black beans– rinsed and drained
- Frozen corn
- Red enchilada sauce– I like to use Rosarita Enchilada Sauce.
- Frozen tater tots– I like to use Ore-Ida Tater Tots.
- Cilantro-optional garnish-finely chopped
- Green onions-optional garnish-chopped
How do I make this Tex Mex Tater Tot Casserole?
Preheat oven to 375 degrees. Spray a 9×13 inch baking dish with non-stick cooking spray.
Add the ground beef and the onion to a 12-inch skillet, brown meat until thoroughly cooked. Drain off excess fat and return to the stove.
Add the taco seasoning, green chiles, black beans, frozen corn, and enchilada sauce.
Stir in tomatoes and continue stirring until well combined. Cook for another two minutes so the flavors can marinate.
Pour into the baking dish and spread evenly.
Place tater tots evenly over top.
Bake for 35 to 40 minutes. Remove from oven.
Let it cool for 5 minutes before serving.
Garnish with green onions, cilantro, if desired.

- 1 ( 10 oz.) can red enchilada sauce
- 4 cups ( or about 20 oz.) frozen tater tots
- Cilantro, optional garnish-finely chopped
- Green onions, optional garnish-chopped
Directions:

Has anyone tried this with the cauliflower tator tots? I'm not a fan of them but thinking if its mixed with other things they might not be too bad???
