Hasselback Pizza Chicken

 

 This Hasselback Pizza Chicken- A one point, quick and easy weeknight meal that will be loved by the entire family!

Servings: Makes 4 chicken breasts

GREEN: 4 SmartPoints per chicken breast

BLUE: 1 SmartPoints per chicken breast

PURPLE: 1 SmartPoints per chicken breast

Ingredients:

  • 4 ( 4 oz.) boneless skinless chicken breasts, raw
  • 32 slices of turkey pepperoni
  • 1/4 cup light mozzarella 
  • 2 tsp Italian seasoning ( I use Dak’s Italian Blast)
  • 1 large egg, beaten with 1 tsp water 
  • 2 cups zero point marinara sauce ( I use my zero point marinara)

Directions:

  1. Preheat oven to 350 degrees.
  2. Using a knife, cut 4-5 horizontal slices (halfway down) along the middle of each chicken breast.
  3. Press 2 slices of turkey pepperoni into each cut of chicken breast (8 slices of turkey pepperoni per breast) and stuff mozzarella evenly into each cut & repeat with each chicken breast. (using 1/2 oz. mozzarella per chicken breast)
  4. Place the chicken breasts in a baking dish, that has been sprayed with non stick cooking spray.
  5. In a small bowl, whisk large egg with 1 tsp water until well combined.
  6. Using a pastry brush, brush the tops of each chicken breast with egg wash. (The egg wash will help brown the tops of the chicken)
  7. Place baking dish in oven. Sprinkle Italian seasoning on top of each chicken breast.
  8. Cook in preheated oven for about 40 minutes or until chicken is cooked throughout.
  9. Serve with 1/2 cup marinara sauce on top or on the side.

I'm making this for dinner. In oven now. Only thing I didnt have pepperoni, so I used Italian cappicolla. Surely the smartpoints will be different. First time making this.

I made this last night with ZERO point sauce! OMG its so yummy paired broccoli and whole wheat pasta 1 cup for 6 points!
