What are Hawaiian Haystacks?
According to Wikipedia; a Hawaiian haystack is a type of haystack. It is a convenience cuisine dish composed of a rice base and several toppings. It is prepared by topping rice with toppings such as chicken, chicken gravy, diced pineapple, diced tomatoes, Chinese noodles, cheese, and celery.
What can I add to these Hawaiian Haystacks?
- Chicken-You can use a batch of my Zero Point Slow Cooker or Instant Pot Shredded Chicken, or rotisserie chicken breast, without the skin and shredded
- Green onions- thinly sliced
- Chow Mein Noodles: these noodles add a great crunch and 1/4 cup of La Choy Chow Mein Noodles is only 2 points
- Cheese– you can use fat free or low fat cheddar cheese, shredded
- Pineapple Tidbits- drained
- Celery- thinly slices, adds a nice crunch for zero points
- Water Chestnuts-drained and diced- adds a great nice crunch to these haystacks
- Rice- You can use cooked riced cauliflower, white rice , jasmine rice, or brown rice. The point value will vary depending on which one you use.
- Coconut– unsweetened or sweetened, and shredded- gives a great coconut flavor and compliments the Hawaiian flavor with the pineapple tidbits
- Red Pepper: diced- gives a little sweet pepper kick to these haystacks
- Tomatoes-diced

We’ve made a non WW recipe for years called Snow on the Mountain that is very similar that also calls for cream of mushroom and cream of chicken soups, crushed pineapple and chopped tomatoes. If you use the 97% fat free soups the points will still be low. It also calls for a little corn starch to thicken. In our recipe you prepare the chicken and soup then put all the toppings in separate bowls, set on counter and let your guests pick the toppings they prefer. A fun and delicious dish for a dinner party.
