I’ve teamed up with one of my favorite companies, Lakanto, to make this Easy French Toast Casserole using their organic monk fruit sweetener. Makes 6 (1 and 1/4 cup) servings
What ingredients do I need to make this Easy French Toast Casserole?
- One point bread: I like using Sara Lee 45 calorie bread, Nature’s Own no sugar added bread, or 647 Schmidt bread, cut into 1” inch chunks
- Fresh or frozen fruit: If using frozen fruit, add them to the casserole while still frozen (do not thaw). This prevents coloring the batter.
- Eggs: or you can substitute the eggs for 1 1/4 cup liquid eggs
- Fat free half and half: if you don’t have fat free half and half you can substitute it using 2 cups skim or unsweetened almond milk + 1/2 cup regular half and half. If you wanted you could substitute the full amount for unsweetened almond milk or skim milk BUT I highly recommend the fat free half and half-it takes the creaminess and flavor to whole new level of deliciousness.
- Zero point white granulated sugar: I use Lakanto’s Organic Monkfruit Sweetener
- Lemon or orange zest
- Vanilla extract
- Sugar free syrup: I recommend using Mrs. Butterworth’s sugar free syrup or ChocZero no sugar added syrup

How do I make this Easy French Toast Casserole?
Preheat oven to 350 degrees. Spray a 3-quart baking dish with non stick cooking cooking spray.
Spread 1/2 bread cubes to cover the bottom of prepared baking dish.
Cover with 1 cup of fruit, followed by the remaining bread cubes and fruit.
In a small bowl (preferably one with a spout), whisk the eggs together.
Add the fat free half and half, Lakanto’s organic white granulated sugar sweetener, sugar free syrup, vanilla extract, orange or lemon zest, and a pinch of salt. Whisk well.
Pour the egg and milk batter evenly over all the bread chunks.
At this point, you can cover the casserole with plastic wrap or foil and refrigerate it overnight.
Otherwise, preheat oven to 350 degrees. Cover the casserole with foil and bake for 20 minutes.
After 20 minutes, remove foil and bake for another 25-30 minutes or until baked through.
Remove from oven. Let it cool for about 10 minutes before serving.
Can this casserole be made in advance?
Yes, assemble the casserole, cover with plastic wrap, and refrigerate overnight.
The next day, uncover. I like to drizzle the top of the casserole with a little more sugar free syrup- after it’s been sitting in the fridge overnight-then bake as directed.
Keep in mind the baking time may need to be extended by 5-8 minutes, if it has been chilled in the fridge overnight.

There are only 2 of us. Can I scale this recipe down by cutting everything in half. I know this doesn't work for all recipes.

We really enjoyed this recipe. We had frozen wild blueberries that were delicious in it. Reheated very nicely the second day. Will definitely make again.
