These Skinny Mint Chocolate Brownies are a cake-like brownie-super easy to make-with only 4 ingredients! These will curb any sweet tooth! Serve them with a bowl of light ice cream or top with some whip cream for an easy and delicious dessert!

How do I make these Skinny Mint Brownies?
For these brownies I like to use the sugar free devil’s food cake mix as the base instead of the sugar free brownie mix.
I recommend using a 9 x 9 baking dish. If you like your brownies thinner you will want to use 9 x 13 baking dish.
My kids prefer thick-cake like so I use a 9 x 9 dish that makes them thicker and more cake like.
I like to sprinkle my brownies with Swerve Sweetener, Confectioners, which is a powder sugar alternative.

Ingredients:
- 1 box (16 oz. box Pillsbury Sugar Free Devil’s Food Cake Mix
- 1/2 cup water
- 1/2 cup unsweetened applesauce
- dash of peppermint extract ( You can find this in the baking aisle at most grocery stores or online)
- 3 large eggs or 3/4 cup liquid egg substitute
Directions:
- Preheat oven to 350 degrees.
- Spray a 9×9 baking dish with non stick cooking spray. (You can use a 9 x 13 dish the brownie will be thinner and not as thick if you do.)
- In a large mixing bowl combine, dry cake mix, eggs, unsweetened applesauce, water and extract.
- Stir until fully combined.
- Spread brownie batter into prepared pan.
- Bake for 25-30 minutes.
Note:
- You can omit the mint extract all together to make plain chocolate brownies.
- Be aware the peppermint extract can be pretty potent so you’ll not want to add any more than a 1/4 teaspoon.

I don’t remember it being very thin. If you want thicker brownies-you’ll w at to use a smaller baking dish.
