PURPLE: 3 SmartPoints for 1 brownie or 7 SmartPoints for 2 brownies

How do I make these Skinny Mint Brownies?

For these brownies I like to use the sugar free devil’s food cake mix as the base instead of the sugar free brownie mix.

Pillsbury Moist Supreme Sugar Free Devil's Food Cake Mix (Pack of 2)

I recommend using a 9 x 9 baking dish. If you like your brownies thinner you will want to use 9 x 13 baking dish.

My kids prefer thick-cake like so I use a 9 x 9 dish that makes them thicker and more cake like.

I like to sprinkle my brownies with Swerve Sweetener, Confectioners, which is a powder sugar alternative.

You can find it at Whole Foods or online here.

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray a 9×9 baking dish with non stick cooking spray. (You can use a 9 x 13 dish the brownie will be thinner and not as thick if you do.)
  3. In a large mixing bowl combine, dry cake mix, eggs, unsweetened applesauce, water and extract.
  4. Stir until fully combined.
  5. Spread brownie batter into prepared pan.
  6. Bake for 25-30 minutes.

BLUE: 3 SmartPoints for 1 brownie or 7 SmartPoints for 2 brownies

PURPLE: 3 SmartPoints for 1 brownie or 7 SmartPoints for 2 brownies

Note:

  1. You can omit the mint extract all together to make plain chocolate brownies.
  2. Be aware the peppermint extract can be pretty potent so you’ll not want to add any more than a 1/4 teaspoon.
  3. In order to calculate the smart points on a recipe you have to enter the ingredients in manually (by ingredient) not by the nutritional information in the ww recipe builder-since this recipe contains zero point items the app doesn’t realize there is zero point items in the recipe and will calculate it based only off the nutritional info which is not accurate.

I made the “fudgier” recipe with 2 eggs and the SF brownie mix and used cooled coffee in place of water. LOVE! Thank you.

Hi Sue,

I don’t remember it being very thin. If you want thicker brownies-you’ll w at to use a smaller baking dish.
