Creamy Poppy Seed Chicken Casserole

A lightened up family favorite Creamy Poppy Seed Chicken Casserole the whole family will love. It makes for a quick weeknight meal!

Servings: Makes 6 (1 cup) servings

GREEN: 6 Smart points per serving

BLUE: 4 Smart points per serving

PURPLE: 4 Smart points per serving

 

How do I make this Creamy Poppy Seed Chicken Casserole?

Preheat oven to 350 degrees.

Combine chicken, cream of chicken soup, yogurt or sour cream, cheese, poppy seeds, and seasonings. 

Add 2 cups vegetables. Stir until combined. 

Spoon mixture into lightly sprayed with non stick cooking spray 9×13 baking dish.

In a small mixing bowl combine bread crumbs and melted butter. Stir until well combined.

Sprinkle breadcrumb mixture evenly over casserole.

Bake for 30-35 minutes or until golden brown.

Ingredients:

  • 3 cups skinless, boneless chicken or rotisserie (without skin), chopped or shredded, cooked
  • 1 (10 1/2 oz.) can healthy request cream of chicken soup, condensed 
  • pepper, to taste
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp seasoned salt
  • 3/4 cup light cheese ( I use Velveeta Shreds)
  • 1 cup nonfat plain or Greek yogurt or fat free sour cream 
  • 3 tsp poppy seeds
  • 2 cups mixed zero point vegetables such as: broccoli, peas, or carrots 
  • 1/2 cup Panko Japanese style bread crumbs
  • 2 Tbsp Land o’Lakes light butter, melted

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine cooked chopped, diced, or shredded chicken, cream of chicken soup, yogurt or sour cream, cheese, poppy seeds, and seasonings. 
  3. Add 2 cups vegetables. Stir until well combined. 
  4. Spoon mixture into lightly sprayed with non stick cooking spray 9×13 baking dish.
  5. In a small mixing bowl combine bread crumbs and melted butter. Stir until well combined.
  6. Sprinkle breadcrumb mixture evenly over casserole.
  7. Bake for 30-35 minutes or until golden brown.

    This is so dang good! Made tonight and hubs was suspicious of it but he really likes it. Serve with a side of spaghetti, perfect. I left the cheese off to save some points and I think was fine, it was very creamy.

      Yes, you will want to use cooked shredded chicken.

    This is one of my favorites. It freezes well too. I add broccoli and mushrooms. I have also put the cheese on top and left out the panko crumbs and butter for less points.

      Yes, I would thaw the frozen broccoli- so the casserole doesn’t get too runny from the added frozen water.

    Can you use fresh broccoli? Would I steam it first or add it raw?

      Yes, fresh broccoli would work great. It should cook well with the casserole-I don’t think you’ll need to steam it prior to adding it.
