Easy Baked Queso Chicken

This Easy Baked Queso Chicken makes for a quick and easy meal! Skinless, boneless chicken breasts baked in gooey con queso cheese sauce! Made with just a few ingredients, a 5 minute prep time, and in just one pan- it’s a dinner recipe that your family will love and it’s guaranteed to be devoured!

This Easy Baked Queso Chicken is simple to throw together on those busy weekdays nights! It’s a one pan dinner that takes only 5 minutes to prep!

And who doesn’t love gooey cheesy queso? That’s right-this dish is made with seasoned chicken breasts and smothered in a cheesy con queso. It’s bursting with flavor!  From the toddlers to adults, this recipe is an instant winner! Serve with black beans, my cilantro lime cauliflower rice-or simply scoop it straight onto plates and gobble up. 

What ingredients do I need to make this Easy Baked Queso Chicken?

  • Skinless, boneless chicken breasts– pounded into thin pieces. 
  • Chili powder
  • Onion powder
  • Garlic powder 
  • Cumin
  • Salt
  • Mild green chiles
  • Con Queso sauce-I like use Tostitos Medium con queso dip 
  • Roma tomato– chopped, for garnish.  
  • Fresh cilantro or parsley –chopped, for garnish.

What could I make for sides with this dish?

  • Rice – serve it with white plain white or brown rice, or try it with this Cilantro Lime Cauliflower Rice.
  • Mexican Black Bean and Corn Salad-this Mexican Black Bean and Corn Salad is colorful, infused with Mexican flavors, and drizzled with a tasty lime and garlic dressing.
  • Beans – serve with a side of refried beans or black beans.
  • Green Chile Cornbread Muffins – serve with a side of Green Chile Cornbread for a complete meal.

How do I make this Easy Baked Queso Chicken?

Preheat oven to 375 degrees.  Spray a cast iron skillet or baking dish with nonstick cooking spray.

Season the chicken breasts with chili powder, onion powder, garlic powder, cumin, and salt. 

Place chicken breasts in the bottom of the prepared baking dish or skillet. 

Top chicken breasts canned green chiles.

Spread queso sauce evenly over each chicken breast.

Bake for 30 minutes or until the chicken is cooked through and no longer pink in the center.

Top with remaining chopped tomatoes and fresh cilantro or parsley.

Serve warm and with your favorite Mexican side.

  • 1 tsp cumin
  • ¼ tsp salt 
  • 1 (4 oz.) can mild green chiles
  • 1 cup Con Queso sauce, I like use Tostitos con queso dip 
  • 1 roma tomato, chopped
  • 2 Tbsp fresh cilantro or parsley , chopped, for garnish

Loved this recipe! Super easy to make and very flavorful. I didn’t have green chilis so I drained a can of rotel and added it instead. Will definitely be making again!

The flavor of this dish was amazing & it was so easy to prepare. The only issue is (and we definitely may have done something wrong) is it was SOOOO spicy. Our 7 year old and I both thought it was way too hot to even eat, and even my spice loving hubby said it was super spicy. We will make it again with no chiles & no spicy seasoning. Hopefully that helps tone it down! Thanks so much for sharing your recipe with us!

I loved this recipe! I loved it so much that I'm making it for a family dinner. The problem is that the family had to cancel due to sickness and I, along with Janet, would like to know if this would be good frozen.
