Easy One Pot Taco Soup

This Easy One Pot Taco Soup is hearty, filly, and perfectly flavored. This Taco Soup is packed with homemade taco seasonings, onions, garlic, black beans, corn, lean ground beef or ground turkey, crushed tomatoes, green chilies, and beef broth! It’s just what you need to make a simple weeknight meal that the whole family will love!

Soup season is a favorite of mine, but I’m always looking for new ways to make it easy.

This quick and easy taco soup takes less than 30 minutes, and it’s perfect for busy weeknights! It’s also enjoyed by everyone—including kids!

Made in one pot for easy clean-up, this taco soup is the perfect thing to whip up when you don’t have a lot of time on your hands.

Top with cheese, avocado, and all the fixin’s. Enjoy!

What ingredients do I need to make this Easy One Pot Taco Soup?

  • Lean ground beef or turkey- I like to use 96% lean ground beef. It gives this soup a bit more flavor due to the fat content in beef vs. turkey. Keep in mind the point value may vary depending on which one you use and the fat content. You can use 99% ground turkey, if you have ground turkey as a zero point food item-and want to keep this soup low in points.
  • Kosher salt
  • Ground black pepper
  • Onion-diced 
  • Garlic– minced
  • Crushed tomatoes-canned not drained. 
  • Green chilies-diced 
  • Chili powder
  • Garlic powder 
  • Onion powder 
  • Dried oregano 
  • Paprika
  • Cumin
  • Black beans-canned and drained 
  • Corn kernels-frozen and thawed 
  • Low sodium beef broth

Optional toppings:

  • Shredded cheese 
  • Fat free sour cream or non fat plain Greek yogurt 
  • Fresh chopped cilantro leaves or scallions– finely sliced
  • Avocado- sliced
  • Lime juice

  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 ( 15 oz.) can pinto beans, drained 

How do I make this Easy One Pot Taco Soup?

This Easy One Pot Taco Soup can be made on the stove in less than 30 minutes or in a slow cooker. Here are the step by step directions on how to make it on the stove.

Spray a Dutch oven or large pot with non stick cooking spray. Add the ground beef or turkey and season with salt and pepper. Cook over medium heat for about 5 minutes or until lightly brown.

Add onion, garlic, and cook for 1 minute or until onions are softened.

Then add the crushed tomatoes, green chilies, chili powder, garlic powder, onion powder, oregano, paprika, and cumin.

Stir and let it simmer for two minutes.

Then add the beans and corn.

Add then the beef broth. Stir until well combined.

Cover and let it simmer for 15 minutes. Remove lid.

Season with more chili powder, salt and pepper, if desired.

Serve warm with your favorite toppings such as; cilantro, cheese, non fat plain Greek yogurt, fat free sour cream, avocado slices, and/or tortilla chips, for additional points.

  • 1/2 medium onion, diced 
  • 3 garlic cloves, minced
  • 1 (28 oz.) can crushed tomatoes 
  • 1 ( 4 oz.) can green chilies 
  • 2 tsp chili powder
  • 1 tsp garlic powder 
  • 1 tsp onion powder 
  • 1 tsp dried oregano 
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 (15.5 oz.) can canned black beans, drained 
  • 2 cups corn kernels, frozen and thawed 
  • 2 cups low sodium beef broth

Optional toppings:

  • Shredded cheese 
  • Fat free sour cream or non fat plain Greek yogurt

Slow Cooker Directions:

  1. In a medium skillet, cook the ground beef until browned over medium heat. Drain, and set aside.
  2. Place the ground beef and all other ingredients into a slow cooker. Mix until well combined.
  3. Cook on LOW for 8 hours or HIGH for 3-4 hours.
  4. Serve warm with your favorite toppings such as; cilantro, cheese, non fat plain Greek yogurt, fat free sour cream, avocado slices, and/or tortilla chips, for additional points.
