Healthy Ham Fried Rice 

This Healthy Ham Fried Rice makes for fantastic family friendly side dish or meal-made with simple ingredients like diced ham, fresh and frozen veggies, eggs, and leftover rice! This is simple to make and can be made in under 30 minutes!

What ingredients do I need to make this Healthy Ham Fried Rice?

  • Sesame oil
  • Garlic- minced
  • Crushed red pepper flakes
  • Eggs
  • Cooked diced ham- I use Kroger or John Morrell 
  • Red or green bell pepper-diced
  • Onion, diced
  • Frozen peas
  • Frozen carrots-diced and optional
  • Cold cooked brown or white jasmine rice- You can use leftover long grain white or brown rice or I like to use Trader Joe’s microwavable organic brown rice. Let the rice sit out on a baking sheet so the moisture can evaporate. It’s best to add the rice when it’s cold.
  • Soy sauce
  • Geen onions-sliced

Can I use cooked riced cauliflower instead of regular brown or white rice?

Yes. You can use cooked riced cauliflower. However; keep in mind that cauliflower contains lots of moisture/ water which can make this rice dish mushy-I like is to press any excess moisture from the rice by transferring the cauliflower rice to a large paper towel or absorbent dish towel and squeeze/press to remove any remaining water. This ensures no excess moisture remains, which can make your dish soggy. Note: The cauliflower rice has a slightly different texture than regular rice.

Can I freeze this Healthy Ham Friend Rice?

Yes, you can absolutely freeze fried rice! I would recommend reheating it on the stove in a frying pan to keep it from getting mushy.

How do I make this Healthy Ham Fried Rice?

Heat a small, non-stick skillet or Wok over medium-high heat. In a small bowl, whisk the eggs. Add eggs to skillet and cook, stirring frequently, for about 2 minutes.

Remove scrambled eggs from skillet; chop and set aside.

Meanwhile, heat sesame oil along with red/green peppers and onion in the same skillet or wok over medium-high heat. 

Add crushed pepper flakes and garlic and sauté for 2 minutes.

Add ham, and stir-fry for 5 minutes or until golden. 

Stir in pea carrots, cooked rice, green onions, and soy sauce.

Stir in scrambled eggs.

Cook and additional 3 to 4 minutes or until thoroughly heated.

Garnish with additional green onions.

  • Pinch of crushed red pepper flakes
  • 2 large eggs
  • 1 cup cooked diced ham- use Kroger or John Morrell 
  • 1/2 large red or green bell pepper, diced
  • 1/2 yellow onion, diced
  • 1 cup frozen peas
  • 1 cup diced carrots, optional
  • 4 cups cold cooked brown, white, or cauliflower rice. I like to use Trader Joe’s microwavable organic brown rice. 
  • 1/4 cup soy sauce
  • 4 green onions, sliced

Directions:

  1. Heat a small, non-stick skillet or Wok over medium-high heat.

  6. Stir in peas, carrots, cooked rice, green onions, and soy sauce.
  7. Cook for an additional 3 to 4 minutes or until thoroughly heated.
  8. Stir in scrambled eggs.
  9. Serve warm and garnish with additional with green onions, if desired.
