These Individual Tex-Mex 7-Layer Dip Cups are individually portioned-perfect for parties, meal prep lunches, or even as a snack!

What ingredients do I need to make these Individual Tex-Mex 7-Layer Dip Cups?

  • Fat free refried beans
  • Guacamole –I love using my homemade recipe HERE or you can use store bought-Trader Joe’s sells a reduced guilt guacamole that 1 smartpoint for 2 Tablespoons
  • Taco seasoning
  • Non fat sour cream- I like to mix this with the taco seasoning for added flavor
  • Non fat plain Greek yogurt – I like to mix this with non fat sour cream and the taco seasoning and you don’t even taste it.  By doing so, it keeps the points low!
  • Fat free salsa 
  • Reduced fat cheddar or Mexican blend cheese- shredded. I use Trader Joe’s lite three cheese blend
  • Roma tomatoes- diced
  • Green onions-sliced
  • Sliced olives-canned
  • 8 (9-ounce) glass or plastic cups
  • Tortilla chips– I love the bite size Tostito’s tortilla chips or making my own using low point tortillas and cooking them in the air fryer.

How do I make these Individual Tex-Mex 7-Layer Dip Cups?

In a small bowl, mix fat free sour cream or non fat sour cream and non fat plain Greek yogurt with taco seasoning.

Whisk until well combined. 

Then assemble the cups:In each individual sized cups, layer 2 tablespoons beans, 2 tablespoons fat free sour cream mixture, 2 tablespoons guacamole, 2 tablespoons salsa, and then top with 1 tablespoon cheese. 

Garnish each cup with sliced green onions, olives, and diced tomatoes, if desired.

Serve with sliced veggies or low point tortilla chips.

Store in the refrigerator until serving and serve with additional chips.

Directions:
