What is Mississippi Chicken?
Mississippi Chicken is a spin off from the popular dish Mississippi Pot Roast; a combination of five ingredients: one packet of au jus gravy mix, one packet of ranch dressing mix, pepperoncini, light butter, and chuck roast-but replacing the chuck roast with boneless, skinless chicken.
What kind of chicken can I use?
- skinless, boneless chicken thigh ( the point value will vary if using chicken thighs)
- skinless, boneless chicken tenders
- skinless, boneless skin cutlets (breasts-cut in half)
How do I make this Mississippi Chicken?
You can this Mississippi Chicken in the Instant Pot or Slow Cooker.
If you are making this in the Instant Pot you will:
Place chicken broth at the bottom of the Instant Pot. Put the chicken tenders or halved chicken breasts in the bottom of Instant Pot.
Sprinkle the ranch seasoning mix & gravy mix over the chicken.
Add the pepperoncinis and juice.
Top with light butter.
Turn the steam release knob to the sealing position. Press the “Pressure Cook/Manual Button” and select 8 minutes.
When the cook time is finished, let it sit for a 5 minute “Natural Release.”
Turn to the “Venting” position to “Quick Release” and to let out the remaining pressure.
What can I serve with this Mississippi Chicken?
This chicken can be shredded with a fork and served with:
- Inside a dinner or ciabatta roll.

- Mashed cauliflower.
- Rice-white or brown.

What can I serve this with?
- Mashed Potatoes: I use refrigerated mash potatoes when we are short for time.
- Cauliflower Rice: this is a great low-carb option in comparison to mashed potatoes or traditional rice.
- Buns: we like to use the Great Value or keto buns from Walmart.
- Noodles: the texture of egg noodles compliments this hearty roast.
- Vegetables: steamed or roasted baby carrots or green beans is always a side favorite!
Ingredients:
- 2 lbs. boneless, skinless chicken breasts or tenders ( you can use fresh or frozen but thawed), if using chicken breasts cut in half
- 1/2 cup low sodium chicken broth or water
- 1/2 (16 oz.) jar sliced Pepperoncinis or 6 whole Pepperoncinis, (with 1/4 cup juice-optional)
- 1 (1 oz.) packet Au Jus gravy or dry brown gravy mix
- 1 (1 oz.) packet dry ranch dressing mix
- 2 Tbsp Land O’ Lakes light butter made with canola oil
Instant Pot Directions:
- Place chicken broth at the bottom of the Instant Pot. Put the chicken tenders or cut chicken breasts in the bottom of Instant Pot.
- Sprinkle the ranch seasoning mix & gravy mix over the chicken. Add the pepperoncinis and juice. Top with light butter.
- Turn the steam release knob to the sealing position.
- Press the Pressure Cook/Manual Button and select 8 minutes.
- When the cook time is finished, let it sit for a 5 minute Natural Release.
- Turn to the “Venting” position to Quick Release and to let out the remaining pressure.

- Place the chicken tenders or halved chicken breasts into the slow cooker. Add chicken broth.
Sprinkle the ranch seasoning mix and gravy mix over the chicken and broth. - Add the pepperoncinis and juice. Top with light butter.
- Cover with lid and cook on low for 7 hours or on high for 4 hours.
- This chicken can be shredded with a fork to serve on sandwich rolls or I love it served over mashed potatoes, mashed cauliflower, rice, or my loaded mashed cauliflower.
