These Lightened Up Caramel Apple Muffins are everything you can imagine-bits of apple and soft caramels throughout the muffin, a crumbly cinnamon topping that will smell so good in the oven-I’m telling you-you’ll want to bake a batch each week!

Lakanto Classic Sweetener

I use Lakanto Classic Monkfuit Sweetener and Lakanto Golden Monkfruit Sweetener in my baking recipes. The Classic is a zero point white granulated sugar substitute and the the Golden is a zero point brown sugar substitute.  Lakanto MonkFruit Sweetener is a zero glycemic, zero calorie and all natural sugar substitute. It is by far the best tasting sugar alternative and has zero aftertaste or gritty texture like some of the sugar alternatives have. It has a 1:1 ratio to real sugar-so if you were to use a different sugar substitute you will want to use the measurement that would be equal to real sugar. If you use a different sugar alternative you’ll want to check the point value on the brand you use. They can vary in points.

HOW DO I MAKE THESE LIGHTENED UP CARAMEL APPLE MUFFINS?

Preheat oven to 350 degrees. Spray a regular size muffin pan with non stick cooking spray. Set aside.

In a large bowl, combine the flour, sweetener, baking powder, cinnamon and salt.

In a separate bowl, whisk the egg, unsweetened almond milk, unsweetened applesauce, and vanilla or caramel extract.

Stir into wet ingredients into the dry ingredients and stir until JUST a combined. It’s okay if there’s lumps.

You don’t want to over mix-otherwise the muffin texture will be completely off.

 Fold in diced apples and diced caramels.

Stir until combined. Evenly distribute muffin batter into the prepared 12 muffin cups. Fill three-fourths full.

In a small mixing bowl combine, topping ingredients. Mix until well combined.

Sprinkle the topping evenly over the muffin batter.

Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.

Let them cool for 5 minutes before removing from pan.

HOW DO I STORE THE LEFTOVERS?

Let them cool completely. Store leftovers in a resealable ziplock bag. Store in the refrigerator for up to a week or in the freezer for about three months. Reheat in air fryer or microwave, if desired.

  • 2 Tbsp ” I can’t believe it’s not butter” or any light butter, melted
  • 1 tsp ground cinnamon

Directions:

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup zero point white granulated or brown sugar sweetener- I use Lakanto Classic or Golden monk fruit sweetener 
  • 2 tsp baking powder
  • 2 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 large egg, room temperature
  • 1 cup unsweetened almond milk
  • 1/4 cup unsweetened applesauce
  • 2 tsp vanilla or caramel extract
  • 1 medium apple, peeled and diced
  • 8 Werther's Original, Chewy Caramels or 12 Sugar Free Chewy Caramels, chopped

Topping Ingredients

OMG I just made these muffins and they are so delicious!! I followed your recipe but I actually used a large apple because that’s what I had on hand. I actually got 18 muffins instead of 12 which actually made the muffins only 2 pts. each. I ate one while it was still warm because I couldn’t wait…they smelled so good. Thank you for this fantastic recipe!!

In the directions for caramel apple muffins, you have butter listed in the wet ingredients. Is that correct? If so how much butter do we use? I made the lightened up caramel apple muffins. These muffins are so yummy! I did add two tablespoons of butter to the batter because in all your other muffin recipes 2 Tbl are always added before batter is completely combined. Also listed in this recipe it calls for 1/2 cup of butter for the topping. Is that correct? I did use the 1/2 cup for the toppings but it appeared to make it very wet. Again, the muffins are very good and I will be making again.

Thank you so much for reaching out. I apologize the wet ingredients should included sweetened applesauce (not butter). The butter is just in the crumble topping-and its 2 Tbsp not 1/2 cup. (I 'm not certain where you saw 1/2 cup).
