Lightened Up Classic Mac N’ Cheese

This Lightened Up Classic Mac N’ Cheese is an all time favorite at our house-the best part is no one knows it’s lightened up! It’s creamy, cheesy and oh-so good!

What ingredients do I need to make this Lightened Up Classic Mac N’ Cheese?

  • Barilla Whole Grain or Plus elbow macaroni, uncooked
  • Land O’ Lakes light butter made with canola oil
  • All purpose flour
  • Skim milk
  • Salt
  • Black pepper
  • Light or fat free cheddar cheese, shredded ( I use Velveeta Shreds or Trader Joe’s light 3 cheese blend)
  • Healthy request cheddar cheese soup, condensed

How do I make this Lightened Up Classic Mac N’ Cheese?

Preheat oven to 350 degrees.

Cook macaroni according to the package. Drain and set aside

Stir in flour until combined and a roux is made. Add milk and stir occasionally until it comes to a boil and thickens.

Remove from heat. Stir in cheese.

In a large mixing bowl combine, cooked macaroni and the can of cheese soup.

Pour milk/cheese sauce over cooked macaroni with the can of cheese soup.

Pour macaroni into a 9 x 13 baking dish that has been sprayed with non stick cooking spray

Bake for 20-22 minutes, uncovered or until bubbly.

  • 1 1/2 cups skim milk
  • 1/2 tsp salt

  • 1 cup light or fat free cheddar cheese, shredded ( I use Velveeta Shreds or Trader Joe’s light 3 cheese blend)
  • 1 ( 10.5 oz.) can healthy request cheddar cheese soup, condensed

Directions:

  1. Preheat oven to 350 degrees.
  2. Cook macaroni according to the package. Drain and set aside.
  3. In a saucepan, melt butter over medium heat. Stir in flour until combined and a roux is made. Add salt, pepper, milk and stir occasionally until it comes to a boil and thickens. Remove from heat. Stir in cheese.
  4. In a large mixing bowl combine, cooked macaroni and the can of cheese soup. Pour the milk/cheese sauce over cooked macaroni with the can of cheese soup.
  5. Pour macaroni into a 9×13 baking dish that has been sprayed with non stick cooking spray.
  6. Bake for 20-22 minutes, uncovered or until bubbly.

Has anyone made this and NOT baked it? I'm looking for a stove-top recipe. The pic after adding the soup looks very saucy, so maybe I could add more noodles and stretch it out a few more servings?
