Lightened Up Copycat Starbucks Egg Bites with Bacon & Gruyère

You can make these Lightened Up Copycat Starbucks Egg Bites with Bacon & Gruyère at home! These egg bites are pretty darn close to the ones from Starbucks, and you can make them at home for a lot less money, calories, and fat than theirs! These make for the perfect grab-and-go breakfast-and will be on your meal prep rotation for years to come!

What are Starbucks Sous Vide Egg Bites with Bacon & Gruyère made of?

Starbucks sous vide egg bites are made with applewood-smoked bacon and aged Gruyère Monterey Jack cheeses folded into cage-free eggs and cooked using the French “sous vide” technique which creates a velvety texture that’s full of flavor. 

What is does Sous vide mean?

Sous vide is a French cooking technique and the term translates to “under vacuum in a cooking pouch and heated at a precise temperature in a water bath. Instead of relying on perfect timing, sous vide relies on precise temperature control. This technique creates a perfectly velvety, creamy texture which makes Starbucks Egg Bites so freakishly delicious! 

However; there’s no need for a sous vide machine when you can use a muffin pan, cornstarch, and a water bath (baking dish with water)at the bottom rack of the oven. The water in the dish provides a steam-like environment to keep that nice velvety consistency you get with the Starbucks Egg Bites with Bacon & Gruyère.

What ingredients do I need to make these Lightened Up Copycat Starbucks Egg Bites with Bacon & Gruyère? 

  • Bacon-I like to use precooked bacon. I add the crumbles after they have been poured into the muffin tin. I use a spoon or fork to push them into the egg batter so they aren’t stuck on top.
  • Eggs-I love using cage free eggs but any brand of eggs will work. You can also substitute for egg whites if you’d like. You use double the amount of egg minus the yolks.
  • Cottage cheese-you can use fat free, or low fat 1- 2% or 4% cottage cheese. I like to use 2% for more creaminess texture! 
  • Gruyère Cheese-I buy it shredded from Trader Joe’s. This is the kind of cheese Starbucks uses in their egg bites.
  • Cornstarch– Cornstarch keeps the eggs from overcooking and gives them that nice custard like consistency. 
  • Kosher salt
  • Freshly ground black pepper

Can I add other ingredients into these Lightened Up Copycat Starbucks Egg Bites with Bacon & Gruyère ?

Sure! You can add chopped sautéed vegetables such as onion, bell peppers, spinach, mushrooms, or crumbled sausage. 

How do I make these Lightened Up Copycat Starbucks Egg Bites with Bacon & Gruyère?

Fill a 3 quart dish 1/2 full of water and place in bottom rack of oven.

Preheat the oven to 300 degrees. Spray a 12 cup muffin tin generously with a non-stick cooking spray. 

Combine the eggs, cottage cheese, salt, and pepper together in a blender.  Blend until smooth.  

Pour into a large mixing bowl and stir in the corn starch and shredded gruyere cheese. 

Pour mixture evenly into the muffin cups.  Fill each tin approximately 2/3 of the way. Note: the eggs will rise a bit while cooking. 

Top each egg bite with the chopped bacon and gently press them down so some of the bacon crumbles are in the egg mixture and not just on top.

Bake for 25 to 28 minutes or until the eggs are set. 

Let the egg bites rest for at least 5 minutes. 

Gently remove the egg bites from the muffin cups with a spoon.

I like to put them in a liners after they have completely cooled and store the leftovers in an airtight container in the fridge for 5 days.

The water in a pan keeps the eggs from drying out so they have that soufflé texture!
