Watermelon Feta Salad

This Watermelon Feta Salad made with watermelon, feta cheese, and fresh mint is simply irresistible! Perfect for summer. It’s the combination of the saltiness of the feta combined with the sweetness of the watermelon that makes this salad mouth watering delicious! 

Makes 8 servings

A sweet-and-salty combination that will be a hit at your next potluck, or weekend brunch! Made with just a few simple ingredients!  This Watermelon Feta Salad is best made just prior to serving. Prepare just before serving!

What ingredients do I need to make this Watermelon Feta Salad?

  • Ripe seedless watermelon– cubed into 1-inch chunks 
  • Fat free or reduced fat feta cheese-crumbled
  • Mint leaves-minced
  • Limes-juiced
  • Sea salt

How to pick a watermelon?

  1. Go for the size– If it’s uniform size and heavy- then it will be sweet. If it’s elongated it will tend to be more watery than sweet.
  2. Look for the field spot-Most watermelons should have a patch on the bottom, which is where they were resting on the ground before being picked. If the watermelon has a patch that’s a creamy yellow or orange, the watermelon is ripe. If it’s white or green, it was probably picked too soon and isn’t ripe. Remember watermelons do not ripen after they’re picked.
  3. Does it have webbing? Smaller webbing means it’s bland, the larger the webbing the more sweet it will be.
  4. What color is it-If the watermelon is dark and dull it means it’s ripe. If it’s shiny it means it’s not ripe!

How do I make this Watermelon Feta Salad?

Place cubed watermelon, feta cheese, and mint in a large serving platter or bowl.

Squeeze lime juice over the top.

Garnish with a pinch of sea salt.  Serve immediately.

Ingredients: 

  • 8 cups ripe seedless watermelon, cubed into 1-inch chunks 
  • 2 ounces fat free or reduced fat feta cheese, crumbled
  • 5 mint leaves, minced
  • 2 limes, juiced
  • Pinch of sea salt

Directions: 

  1. Place cubed watermelon, feta cheese, and mint on a large serving tray. Squeeze lime juice over the top.
  2. Garnish with a pinch of sea salt. Serve immediately.
