These Mini Reese’s Peanut Butter Protein Waffles are perfect for a protein packed meal prep breakfast! These waffles add more protein to your traditional breakfast! They are packed with vitamins, minerals, enzymes, fiber, prebiotics, omegas, and of course, protein-that will keep you full for hours!

Ever since I started on my wellness journey I’ve always loved protein waffles. Not only is protein good for you, it’s great at keeping us full for hours!

This Reese’s Peanut Butter Protein Waffle recipe I created over 6 years ago when I used to make these waffle every morning-I have since updated it using my favorite mini dash waffle maker and protein waffle mix from Clean Simple Eats-these Mini Reese’s Peanut Butter Protein Waffles have become a new staple in our house for MANY years! And I’m pretty confident they will become a huge hit at your house, too!

What ingredients do I need to make these Reese’s Peanut Butter Protein Waffles?

  • Peanut butter powder 
  • Unsweetened cocoa powder
  • Pure Vanilla extract
  • Egg
  • Water or unsweetened almond milk 
  • Reese’s Peanut Butter– melted. You can find it on Amazon HERE.
  • Unwrapped mini Reese’s Peanut Butter cups-crumbled 
  • Mrs. Butterworth’s sugar free syrup- you can find this on Amazon HERE.
  • Sugar free cool whip

What waffle maker can I use to make these Reese’s Peanut Butter Protein Waffles?

I like to use the Dash mini waffle maker to make mini waffles. The mini waffle maker makes a 4-inch round waffle and it’s the perfect size for meal prep and to make mini waffles-which my kids love to eat.

Can you freeze these waffles?

YES!! I usually make a double batch of the recipe or just freeze leftovers. Place cooled ones in a ziplock bag and freeze for up to two months. My favorite way to reheat them is to pop one or two in a toaster, until hot and crisp. Great for weekday mornings before heading out to school or work!

Can I use the chocolate pancake mix until of using unsweetened cocoa?

Yes, you could use the chocolate pancake mix instead of adding the in the unsweetened cocoa powder, please keep in mind it does have 2 additional WW points per 1/2 cup and may change the point value of the waffles.

How do I make these Reese’s Peanut Butter Protein Waffles?

Preheat your waffle iron and wait for it to heat up.

Spray the waffle iron with non stick cooking spray. 

Whisk all dry ingredients in a large mixing bowl.

Whisk all wet ingredients in a smaller bowl.

Pour wet ingredients in the dry mixture, and mix until just combined

(DO NOT OVER MIX).

The batter should be thick yet with a pourable consistency, so begin with ¾ cup water or unsweetened almond milk and add a little more if needed.

Spray the hot waffle iron with non stick cooking spray and make using about ¼ cup batter for each waffle.

Cook waffle according to waffle iron instructions. (usually it takes roughly 2 minutes per waffle).

Remove waffle from the waffle iron and repeat until all waffles are cooked!

Enjoy!

Top with your favorite waffle toppings!

Dry Ingredients:

  • 1 cup Clean Simple Eats Buttermilk or Vanilla pancake/waffle mix-or Buttermilk Kodiak Power Cakes protein waffle mix
  • 3 tsp unsweetened cocoa powder
  • 1 Tbsp peanut butter powder 

Wet Ingredients:

  • 1 large egg
  • ¾ cup water or unsweetened almond milk whole 
  • 1 tsp pure vanilla extract

Optional Toppings:

  • Reese’s Peanut Butter, melted – 1 WW point per 1/2 Tbsp
  • Unwrapped mini Reese’s Peanut Butter cups, crumbled  – 1 WW point per mini cup
  • 2 Tbsp Mrs. Butterworth’s sugar free syrup – 0 WW points
  • Sugar free cool whip

Wet Ingredients:

  • 1 large egg
