These Broccoli Cheddar Stuffed Chicken Breasts make for a low carb, high protein dinner! They are incredibly tasty, cheesy, and filling! Serve with rice, mashed potatoes, cauliflower rice, or your favorite steamed veggies for a an easy complete meal!

What ingredients do I need to make these Broccoli Cheddar Stuffed Chicken Breasts?

  • Boneless, skinless chicken breasts– I recommend using large thick chicken breasts. Slice each chicken breast lengthwise so that the breast folds open. DO NOT slice it all the way through. 
  • Broccoli florets-chopped
  • Reduced fat sharp cheddar cheese, shredded. I use Sargento reduced fat sharp cheddar cheese.
  • Cheese dip– I like to use use Fritos mild cheddar dip or you can use Great Value Original Cheddar Flavor Cheese Dip, for a gluten-free option.
  • Salt
  • Garlic powder
  • Black pepper
  • Paprika

What cheese dip do I use for these Stuffed Chicken Breasts?

I like to use either the Fritos mild cheddar dip or Great Value Original Cheddar Flavor Cheese Dip. The Great Value Original Cheddar Flavor Cheese Dip is gluten-free so if you are looking for a gluten free option I would recommend using the Great Value Original Cheddar Flavor Cheese Dip.

You can find the Fritos at most grocery stores and you can find the Great Value Original Cheddar Flavor Cheese Dip at Walmart.

The Fritos cheese dip is only 1 WW point per tablespoon and the Great Value Original Cheddar Flavor Cheese Dip is 3 WW points for 2 tablespoons. The overall point value is the same regardless of the one you use.

How do I make these Broccoli Cheddar Stuffed Chicken Breasts?

Preheat the oven to 400 degrees. Spray a baking dish with nonstick cooking spray.

In a small bowl, combine the broccoli, cheddar cheese, and cheese dip. Set aside.

Slice each chicken breast lengthwise so that the breast folds open.

DO NOT slice it all the way through. 

In a small bowl combine seasonings. Stir to combine. 

Spray the top of the chicken breasts with cooking spray, then lightly sprinkle seasonings on each side of the chicken. 

Spread the broccoli cheddar mixture on one side of the chicken

Fold the other side over. 

Secure the chicken with a toothpick.

Place chicken breasts in prepared baking dish. 

Cook for 30-35 minutes, or until the chicken is cooked and the center of the chicken reaches 160 degrees. Cooking time may vary depending on the size of your chicken breasts.
