Lightened Up Dorito Taco Salad 

This Lightened Up Dorito Taco Salad recipe is one of our favorite easy summertime dinners. This Lightened Up Dorito Taco Salad makes for the perfect potluck dish and is quick and easy to make for your upcoming Memorial Day BBQ or family gathering!

Salads make for the perfect meal on a hot summer day! This Lightened Up Dorito Taco Salad is one of my favorites and is packed with so much goodness-lean ground beef, romaine lettuce, cheese, cherry tomatoes, black beans, corn kernels, red onion, olives and Catalina dressing! This recipe is a lighter version of the traditional Dorito salad that my family allays had made-but this one is made using lean ground beef, light Catalina dressing, and garnished with Quest protein taco chips! It’s healthy and so delicious!

What ingredients do I need to make this Lightened Up Dorito Taco Salad?

  • Lean ground beef – I like to use 96% lean ground beef
  • Taco seasoning 
  • Romaine lettuce– chopped 
  • Cherry tomatoes– sliced 
  • Frozen corn kernels- thawed
  • Black beans –drained and rinsed 
  • Red onion-thinly sliced
  • Reduced fat or fat free cheddar cheese-shredded 
  • Sliced black olives
  • Doritos nacho cheese chips or Quest protein nacho cheese chips – I like to use the Quest protein chips which gives the salad 18 additional grams of protein.
  • Catalina lite dressing – you can find the lite version at most grocery stores or HERE on Amazon.

  • Easy Seven Layer Salad- a classic layered salad with seven colorful layers and a homemade lightened-up creamy dressing. It’s an easy make-ahead salad that looks and tastes fantastic.

  • Skinny Creamy Broccoli Salad-packed with broccoli, bacon, red onions, sunflower seeds and tossed together with a creamy ranch dressing!! The combination of all the flavors makes this Broccoli Salad irresistible!
  • Lightened Up Coleslaw Macaroni Salad-combines two favorite summer salads: coleslaw and macaroni salad-packed with pasta, coleslaw, celery, diced apples!
  • Skinny Creamy Grape Salad-a combination of bright green and red grapes slathered in a creamy lightened up cream cheese dressing and then topped with brown sugar and crunchy pecans.
  • Mexican Black Bean and Corn Salad-is colorful, infused with Mexican flavors, and drizzled with a tasty lime and garlic dressing.
  • Lightened Up Asian Chicken Salad-packed with teriyaki chicken, mandarin oranges, edamame, chow-mein noodles, almonds, shredded carrots, cilantro leaves, green onions, red cabbage, and then drizzled with delicious homemade dressing!

How do I make this Lightened Up Dorito Taco Salad?

In a large skillet cook lean ground beef until browned and no longer pink. Drain excess grease. Stir in taco seasoning and water. Cook and stir until taco seasoning is well combined. Remove from heat.

In a large bowl mix the cooked hamburger together with lettuce, tomatoes, black beans, corn, red onion olives, and cheddar cheese in large bowl. Toss to combine.

Refrigerate until ready to serve.

Before serving add dressing and crushed Nacho Cheese Doritos.

Toss to coat.

Serve and Enjoy!

  • 1 lb. 96% lean ground beef

  • 4 cups romaine lettuce, chopped

  • 1 small red onion, thinly sliced

  • 20 Doritos nacho cheese chip, Quest protein nacho cheese, or Quest loaded taco chips 
  • 1 cup Catalina lite dressing

Made this tonight, it was absolutely delicious! Will be on rotation for sure, paired it with a grilled chicken breast! I truly appreciate all your wonderful recipes, I make so many of them weekly.
