And although we are in the middle of summer, I couldn’t help myself but share my lightened up version of it and let me tell you-it’s definitely worth making, even in the summer months!
This Lightened Up One Pan Dumpling Bake is a simple “dump and bake” method-where you basically dump everything in the one dish and throw it in the oven. This is not only easy to make, it saves on dishes, creating a crave-worthy meal.
Whether you’re cooking for yourself or feeding a family, it’s a reliable, delicious recipe you’ll come back to again and again. Experiment with toppings or sides to make it your own—this dish is as flexible as it is flavorful.
What ingredients do I need to makes this Lightened Up One Pan Dumpling Bake?
- Thai red curry sauce- I use the Trader Joe’s Thai red curry sauce. You could use a Thai red curry paste, if preferred.
- Garlic cloves- minced.
- Veri veri teriyaki sauce – you can find this at most any grocery store near the asian foods or HERE on Amazon.
- Milk of your choice – the original recipe uses coconut milk but that is higher in points and truly doesn’t impact the flavor in my opinion.
- Chicken pot stickers – I use chicken vs. pork to save on points and calories.
- Scallion greens-for garnish.
- Chili onion crunch oil- a little goes a long way. Feel free to adjust depending on your spice level preference. You can get HERE on Amazon or Trader Joe’s sells one as well.

How do I make this Lightened Up One Pan Dumpling Bake?
Preheat your oven to 400°degrees. Spray a 9×13-inch baking dish with non stick cooking spray.
Add the red curry sauce, minced garlic, teriyaki sauce, and milk to the prepared baking dish.
Whisk until fully combined.

Arrange the potstickers in a single layer across the dish, smothering them into the sauce.

Cover with aluminum foil and bake for 30-35 minutes.
Remove from the oven.

Top with chili onion crunch oil and chopped green scallions.

Serve over cauliflower rice, brown, or white rice, and your favorite steamed veggie, if desired.
