Lightened Up Pecan Pie Bites

These Lightened Up Pecan Pie Bites are a healthier alternative to traditional pecan pies-and contain less fat, sugar, and calories without sacrificing the flavor! They are everything you love in pecan pie but in mini form! Perfect to make for your next holiday party!

Makes 15 pecan bites

Pecan pie is a popular pie for the holidays-a classic pecan pie is made pecan nuts, eggs, butter, and sugar. Variations may include white or brown sugar, cane syrup, molasses, or maple syrup. A single pecan pie slice can contain up to 500 calories, 27 grams of fat and 31 grams of sugar-making it challenging to fit within your daily points or macros.

This is just one of the reasons why I LOVE these Lightened Up Pecan Pie Bites-these pecan bites are only 62 calories, 5 grams of fat, 1 gram of sugar, per pecan bite. They have been lightened up by swapping out the traditional corn syrup for honey and using a natural monk-fruit brown sweetener instead of regular brown sugar.

If you’re a fan of pecan pie, then you’re going to love these Lightened Up Pecan Pie Bites. They are everything you LOVE in a classic pecan pie but in mini form! Perfect to make and take to your upcoming holiday party!

What ingredients do I need to make these Lightened Up Pecan Pie Bites?

  • Mini phyllo cups– you can find these at most grocery stores. I like to use the Athens Mini Phyllo Dough Shells. You can use the frozen or fully-cooked mini phyllo cups.
  • Light butter-melted.
  • 2 Tbsp zero point brown sweetener-I like to use Lakanto Brown Sweetener. You can save 15% on your order when you use promo code: Pound15. Click HERE to order.
  • Egg- you can use 1 whole egg or 2 egg whites, beaten
  • Honey- I like to use Choczero no sugar added honey. Save 10% on your order with promo code: pounddropper. Click HERE to order.
  • Pure vanilla extract
  • Toasted or roasted pecans– chopped. You can find these are most grocery stores or online HERE on Amazon.
  • Salt

What are phyllo cups and where can I buy phyllo cups?

Phyllo cups are light, flaky layers of dough formed into mini pastry cups, and fully baked. They are fast, versatile and easy to use!

I love the flaky crispy texture of the phyllo shell cups. You can find them in just about any major grocery store-or online HERE on Amazon-and since they are fully baked-these bites can be ready to serve in less than 20 minutes!

What sweetener do I use?

I use Lakanto Classic Monkfuit Sweetener and Lakanto Golden or Brown Monkfruit Sweetener in my baking recipes. The Classic is a zero point white granulated sugar substitute and the “Brown” is a zero point brown sugar substitute.

Lakanto MonkFruit Sweetener is a zero glycemic, zero calorie and all natural sugar substitute. It is by far the best tasting sugar alternative and has zero aftertaste or gritty texture like some of the sugar alternatives have. It has a 1:1 ratio to real sugar-so if you were to use a different sugar substitute you will want to use the measurement that would be equal to real sugar.

If you use a different sugar alternative you’ll want to check the point value on the brand you use. They can vary in points.
