Recreating Taco Bell Mexican Pizzas at home is so easy! First, you just need a few simple ingredients: low carb or low point tortillas, seasoned beef, refried beans, Taco Bell mild or hot sauce, olives, tomatoes, and green onions. These are always a huge hit at our house! My husband and kids love adding their favorite toppings! Enjoy!
What ingredients do I need to make these Lightened Up Taco Bell Copycat Mexican Pizzas?
- Carb balance white low carb tortillas– any low point small tortillas will work. I like the Mission carb balance tortillas. They are 2 WW points each and only 70 calories each!
- Lean ground beef- I like to use 96% lean ground beef. Browned and seasoned with taco seasoning. If you’re wanting this to be vegetarian-you can omit the beef all together!
- Taco Bell taco seasoning
- Fat free refried beans-They act as binding agent that holds the layers together.
- Taco Bell mild or hot sauce– you can find this at most grocery stores! And it legit tastes as if you ordered it from the restaurant.
- Reduced fat Mexican cheese blend-I like to use Trader Joe’s lite Mexican cheese.
- Roma tomato-diced. For garnish.
- Green onion– sliced. For garnish.
How do I make these Lightened Up Taco Bell Copycat Mexican Pizzas?
These can be made in the air fryer or in the oven. Here are the step by step directions for the air fryer:
Lightly spray both sides of the tortillas with olive oil cooking spray. Place one tortilla in the air fryer basket to crisp up for 2-3 minutes at 380° degrees. Repeat step with a second tortilla.
Remove tortilla from basket. Spread half of the refried beans on one tortilla.
Add a layer of taco meat.
Next, lay the second crispy tortilla shell on top of the meat.
Spoon half of the Taco Bell sauce over the top tortilla, then sprinkle on half of the shredded cheese.
Air fry at 325° degrees for 5-7 minutes until the cheese is melted.
Use a large spatula to lift out of the air fryer basket.
Garnish with Roma tomatoes and green onions.
Cut it into quarters and serve warm with your favorite toppings!
Repeat steps for second pizza.

This is the second time I have been making these and they are the BEST. I am doing WW and save enough points to eat two of these. So good. The hardest part is getting the tortilla shells crispy enough lol! I am a single person and made enough for dinners all week. Great, great recipe! I wouldn't change a thing.
