These homemade Oatmeal Peanut Butter Chocolate Chip Bars are easy to make, made with healthy, simple ingredients, perfect for an on-the-go breakfast, snack, or even dessert!

What ingredients do I need to make these Oatmeal Peanut Butter Chocolate Chip Bars?
- Old fashioned rolled oats-uncooked. Be sure to NOT use quick cooking or instant-otherwise the texture of the bars will be too soggy! You can use Quaker Gluten-Free rolled oats as gluten free option.
- All purpose flour – you can substitute the flour for Kodiak pancake buttermilk mix, if you use the Kodiak Pancake Mix you will omit the baking powder, soda, and salt. You can also substitute the all purpose flour for almond, coconut or gluten-free flour. The point value may vary depending on the brand you use.

- Cinnamon-for flavor.
- Baking powder-leavening agent- to help the bars rise.
- Baking soda- leavening agent- to help the bars rise.
- Salt-for taste.
- Unsweetened applesauce- used as a substitute for oil.
- Eggs- beaten
- Honey- for added sweetness and used as a binding agent.
- Vanilla extract- for flavor
- No sugar added chocolate chips– I use ChocZero milk chocolate chips. I LOVE ChocZero no sugar added milk chocolate chips or Lily’s milk chocolate no sugar added chocolate chips. These two brands are my absolute favorite and have NO bitter aftertaste. ChocZero products are sweetened with a special monk-fruit formula that adds just enough sweetness without the sugar. - Peanut butter –I like to use Better’n Peanut Butter which is 3 smartpoints for 2 Tbsp or American Dream Nut Butters “Butter My Cup” which is-1 Tbsp-2 smartpoints or 2 Tbsp-5 smartpoints. If you wanted you could use powdered peanut butter as a substitute for the peanut butter by mixing 6 Tablespoons with 4 Tablespoons hot water.

Well, my two favorite whipped peanut butters Jif Whips and Peter Pan 1/3 less fat whipped have both been discontinued-but I have since found a few other brands that I LOVE!

How do I make these Oatmeal Peanut Butter Chocolate Chip Bars?
How do I make these Preheat oven to 350 degrees. Spray a 8×8 pan non stick cooking spray.
In a medium mixing bowl, mix together the oats, flour, cinnamon, baking powder, baking soda, salt, and protein powder, if using. Set aside.
In a separate bowl combine, unsweetened applesauce, beaten eggs, honey, peanut butter and vanilla.
Mix until combined.
Pour the wet ingredients into the dry and mix until just combined.
Fold in chocolate chips.
Pour and spread the mixture evenly into the prepared pan.
Batter will be a bit thick!
Bake for 20-25 minutes or until golden brown. Let cool before cutting bars.
Cut 5 vertical rows by 2 horizontal rows to get 10 even bars.
Store in an airtight container on the counter for up to 3 days or the in fridge for up to a week.

Hi! I made this recipe and really enjoy the flavor; however, my bars turned out pretty dry. Any ideas on how to prevent this next time? I used flour/baking powder/baking soda and PB2, if that makes a difference. Thank you so much!! Love your recipes!
