What Ingredients do I need to make this Quick and Easy Pumpkin Baked Oatmeal?

  • Old-fashioned rolled oats– not quick or instant oats. I use Trader Joes toasted old fashioned rolled oats. They are less points than the generic rolled oats. The point value may vary depending on the brand you use.
  • Zero point brown sugar sweetener– I use Lakanto Golden or Brown sweetener 
  • Baking powder
  • Salt
  • Cinnamon
  • Nutmeg
  • Ground cloves
  • Ground ginger
  • Eggs
  • Pumpkin puree- not pie filling 
  • Unsweetened applesauce 
  • Unsweetened almond milk– you could use soy, unsweetened cashew milk or skim milk. The point value may vary depending on the kind of milk you use other than the unsweetened almond or cashew milk.
  • Pure vanilla extract

Yes, this Quick and Easy Pumpkin Baked Oatmeal is an awesome meal prep recipe. Make it the day before and store in the refrigerator and bake it the next morning for breakfast or brunch! You’ll need to increase the cooking time by 10 minutes if the oatmeal was stored in the fridge overnight.

How do I make this Quick and Easy Pumpkin Baked Oatmeal?

Preheat oven to 350 degrees. 

Spray a 8×8 baking dish with non stick cooking spray. In a large mixing bowl combine all the ingredients.

Stir until well combined. 

Pour mixture into prepared baking dish. 

Bake for 30-35 minutes or until knife inserted in center comes out mostly clean.

Let it cool for 5 minutes before serving.

Top with fat free cool whip, if desired.

Yes, store leftovers in an airtight covered container in the refrigerator for up to 4 days or freezer for up to 2 months.

These were very good, not too sweet at all, which I really liked but the cool whip helped with that. The only thing is, I had to bake mine about 15 minutes longer than the recipe said just to get the knife to come out clean. Will definitely make again!
