What is Delicata Squash?

Delicata squash is a variety of winter squash with cream-coloured cylindrical fruits striped in green or orange. As its name suggests, it has characteristically a delicate rind. It is also known as peanut squash. Delicata squash is one of the easiest winter squashes to prep. There’s no need to peel the skin and its soft rind makes it easy to cut through effortlessly. That’s right (no need to peel!), and it’s easy to slice!

When and where can I buy Delicata Squash?

Delicata squash is available during the fall and winter. They are in season at the same time as other winter squashes like butternut and acorn! I get mine at my local Trader Joe’s or Sprouts.

What ingredients do I need to make this Roasted Delicata Squash?

  • Delicata squash
  • Kosher salt , to taste 
  • Black pepper, to taste 
  • Olive oil cooking spray 

What seasonings can I add for added flavor?

You can season the delicate squash with different seasonings and adjust the seasonings to your taste preference. Here are just a few optional seasoning options:

Savory seasonings:

  • 1/4 tsp garlic powder
  • 1/4 tsp dried rosemary
  • 1/8 tsp ground sage 

Sweet seasonings

  • 1/4 tsp ground cinnamon 
  • 1/4 tsp pumpkin spice 

Spicy seasonings:

  • 1/4 tsp of chili powder
  • 1/8 tsp of cayenne pepper

 

How do I make this Roasted Delicata Squash?

This Roasted Delicata Squash can be roasted in the oven or in the air fryer. Here is a step by step directions for roasting it in the oven.

Preheat the oven to 425 degrees and grease a baking sheet with non-stick cooking spray. 

Wash the outside of the squash then dry it completely.

Cut both ends of the squash to create flat ends on both sides.

Cut squash in half lengthwise and use a large spoon to scrape out any seeds.

Cut each side into ½” inch half moon pieces.

Try to keep the thickness of each slice the same throughout.

Put the slices in a bowl. Spray the pieces of squash with olive oil cooking spray, add seasonings of your choice, salt and pepper. Toss to mix well.

Place squash slices on to the prepared baking pan.

Bake for 18 minutes.

Remove form oven and flip squash over and bake for an additional 18 minutes or until golden brown and crispy on the edges.

  4. Cut into ½” inch half moon pieces.
  5. Put the slices in a bowl. Spray the pieces of squash with olive oil cooking spray, add seasonings of your choice, salt and pepper. Toss to mix well.
  6. Place the squash slices in an air fryer basket. Lay them in a single layer. Set the air fryer to 400 degrees for 10 minutes. 
  7. After about 5 minutes take the basket out and shake to toss the squash
  8. Cook for another 2-5 minutes or until golden brown and crispy on the edges.

Hi Bridget,

Yes, it’s similar to a sweet potato. The skin/rind is edible-no need to peel-or if you prefer no skin/rind -you can peel before slicing!
