  • Baking powder

  • Cinnamon
  • Nutmeg
  • Ground cloves

  • Pumpkin puree- not pie filling 
  • Unsweetened applesauce

How do I make this Quick and Easy Pumpkin Baked Oatmeal?

Preheat oven to 350 degrees. 

Spray a 8×8 baking dish with non stick cooking spray. In a large mixing bowl combine all the ingredients.

Stir until well combined. 

Pour mixture into prepared baking dish. 

Bake for 30-35 minutes or until knife inserted in center comes out mostly clean.

Let it cool for 5 minutes before serving.

Top with fat free cool whip, if desired.

Yes, store leftovers in an airtight covered container in the refrigerator for up to 4 days or freezer for up to 2 months.

Hi Linds! I love all your recipes but have a question: some of these seem like small servings (I know that real serving sizes are like that) and I'm just wondering what you do to stay full? I lost 25 pounds, and gained it all back plus more. I'm frustrated but don't want to give up. Thanks!!!!

Is it supposed to be very moist or did I not cook it long enough??

It should be a bit moist when it’s done in the oven, but not watery at all. It will firm up a bit more as it cools too. If it's too watery- if may need to be baked a little longer! Keep in mind ovens can vary in temperature.

Excellent recipe! I made a batch this morning and enjoyed a piece for breakfast and another for my afternoon snack. It uses the perfect blend of spices and the sweetness is nicely balanced.
