This Skinny Pineapple Upside Down Cake is a perfect cake to take to a family gathering. Just wait until you taste the combination of the crushed pineapple with the maraschino cherries!

Servings: Makes 16 slices

GREEN: 3 SmartPoints per slice if using liquid egg substitute or 4 SmartPoints per slice using 3 whole eggs 

BLUE: 3 SmartPoints per slice

PURPLE: 3 SmartPoints per slice

Bundt Cakes are perfect for parties, family gatherings, holidays, and more. This Skinny Pineapple Upside Down Cake is super easy to make and will be sure to please a crowd.

 

How do I make this Skinny Pineapple Upside Down Cake?

In a large mixing bowl combine, 1 (8 oz.) can crushed pineapple drained, sugar free yellow cake mix, eggs, water and unsweetened applesauce.

 

Open can of crushed pineapple, drain and pour into bottom of prepared pan. 

Place diced cherries at the bottom of prepared pan with pineapple.

Pour batter over pineapple and cherries.

 

Bake for 30-35 minutes or until a toothpick comes out clean when inserted. 

Cool for 10 minutes before flipping cake over on to a plate or cake dish.

 

 

Ingredients:

  • 1 (16oz.) package Pillsbury Sugar Free Yellow Cake Mix
  • 3 eggs or 3/4 cup liquid egg substitute 
  • 1/3 cup unsweetened applesauce 
  • 1 cup water
  • 10 maraschino cherries (cut in half)
  • 2 (8 oz.) can crushed pineapple, drained

 

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl combine, 1 (8 oz.) can crushed, drained pineapple, cake mix, eggs, water and unsweetened applesauce.
  3. Beat on low until batter is completely combined. Mix on high for 90 seconds.
  4. Spray a 9-inch Bundt Tube Pan with non stick cooking spray.
  5. Open 1 (8 oz.) can of crushed pineapple, drain, and pour into bottom of prepared pan. 
  6. Place diced cherries at the bottom of prepared pan with pineapple.
  7. Pour batter over pineapple and cherries.
  8. Bake for 30-35 minutes or until a toothpick comes out clean when inserted.

    I am just a little bit in love with this. Now all Better Crocker needs to do is come up with a GF sugar free cake mix and I would be all set. I will happily settle for the amazing cheesecakes. I am addicted to them.

      You will use two altogether. 1 (8oz) inside the batter and 1 ( 8oz.) at the bottom of the pan.

    Is the sugar frer cake mixes higher in points than a regular cake mix? Does the higher sugar alcohols & carbs make the points value higher?

      The Sugar Free Cake Mix lower in points than the regular cake mix. The sugar free Pillsbury Yellow Cake mix is 39 points for the entire package. The regular Pillsbury Yellow Cake Mix is 74 points. So there is a quite a bit of difference.

    This sounds so good but when I put your nutritional information into the WW app it comes up to 7 Freestyle smart points per serving. You say that it is 3 Freestyle smart points. I’m so confused?

      I order for the points to be accurate you will need to enter the ingredients into the ww app recipe builder rather than using the nutritional information because this recipe contains zero point foods- also, be sure to change the servings to equal the amount of servings in the recipe.

    I am not a lover of maraschino cherries. Is there something that could be substituted, or could I just leave them out. I will lose that pop of color but that is ok with me. What about some regular cherries?

      You can omit the cherries altogether or or substitute them for fresh raspberries if you still want a pop of color.

    Hi!

    I just inputted the information on WW & im getting that it’s 1 smart point. Is that correct or am I doing something incorrect?

      Hi

      So the whole package of the sugar free cake mix is 47 points. It makes 16 servings-so that comes out to 3 points per serving.

      Sometimes the ww app will default to one serving-you will need to change it to 1 package.
      Would that be the reason?

    Oh.My! This is the happiest cake I’ve ever seen!!!! ‘WOW’ doesn’t even do it justice. My 11 year old daughter was sitting next to me while I was reading the post and then said “WOW” as soon as she saw the first picture, and then when I scrolled down to cut cake, she was like “WHOOOOAAAA! This is unbelievable!” I love the upside down thing can’t wait to play around with the idea for my kids’ birthdays coming up in August.
