Skinny Raspberry Oatmeal Bars

These Skinny Raspberry Oatmeal Bars are amazing for breakfast, a midday snack or even as a dessert!! These are the quickest, tastiest, low point oatmeal bars I’ve ever made!

Servings: Makes 18 bars

How do I make these Skinny Raspberry Oatmeal Bars?

In a large mixing bowl, combine cake mix, oats and butter and stir until crumbly. 

In a small bowl add preserves and water. Stir until well blended. Spread over the cooled crumble.

 

Let them cool for 10 minutes before serving.

 

Ingredients: 

  • 1 package ( 16 oz.) Pillsbury sugar free yellow cake mix
  • 2 cups quick-cooking oats
  • 5 Tbsp Land o’ Lakes light butter made with canola oil or any light butter
  • 1 jar ( 12.75 oz) sugar free raspberry preserves
  • 1 Tbsp water

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine cake mix, oats and butter and stir until crumbly. 
  3. Spray a 13 x 9 baking dish with non stick cooking spray. Press 3 cups of the crumble in a 13 x 9 baking dish. Bake for 10 minutes.
  4. Let the crumble cool for 10 minutes. 
  5. In a small bowl add preserves and water. Stir until well blended. Spread over the cooled crumble.
  6. Sprinkle remaining crumble on top of the preserves. Bake for an additional 20-22 minutes or until slightly brown.
  7. Let them cool for 10 minutes before serving.

Made these yesterday. A few things I would change ( let me preface this by saying I’m a home baker and am always switching things around). There is a lot of crumble/ crust mixture for these bars which is amazing! The filling, however, just wasn’t there. I would make a stove top jam using berries, monk fruit, salt and cinnamon to use as the filling. The crust has a very light texture, which was perfect! I like how these bars make you feel like your splurging and you don’t feel guilty! Overall, very good! Even the hubs liked them! We did add some fat free Reddi Wip as a garnish, which elevated them to a whole new level!! ❤️

Just made it with pillsbury sugar free devils food cake mix with some coconut Reddi whip and it was delicious!
