Strawberry Poppyseed Salad (Panera Copycat)

This Strawberry Poppyseed Salad was inspired by Panera’s Strawberry Poppyseed Salad! It’s packed with so much goodness- romaine lettuce, fresh fruit, boneless skinless chicken strips, toasted pecans, and then drizzled with a mouth watering homemade poppyseed dressing!

What Ingredients do I need to make this Strawberry Poppyseed Salad (Panera Copycat)?

  • Skinless Boneless Chicken Strips– cooked and sliced. You could use rotisserie chicken without the skin on. I usually use the Tyson Grilled and Ready Chicken Breast Strips or diced chicken that are frozen. I just thaw them out, season with salt, pepper, and paprika, and heat them in a skillet for a few minutes. You can find them at most grocery stores.   • Romaine Lettuce: Romaine pairs perfectly with the fruit in salad. However, you can also use baby spinach leaves or a mixture of both. Washed and patted dry.
  • Strawberries: thinly sliced. Fresh is best for this salad. Washed and patted dry.
  • Blueberries: Fresh is best for this salad. Washed and patted dry.
  • Pineapple: Fresh is best but canned pineapple chunks works. Drain the juice. 
  • Mandarin Oranges: Panera uses canned mandarin oranges. Drain the juice.  
  • Pecans:I like to use toasted pecans. Raw or toasted work well. I use Trader Joe’s toasted pecans. I like to weight the pecans to ensure I get a fair amount for the point value. I use THIS food scale to weight the pecans. 
  • Poppyseed Dressing: You can use your favorite bottled poppyseed dressing such as Skinny-girl Poppyseed Fat Free-Sugar Free Salad Dressing– which is 10 calories or zero points for 2 Tbsp, or Litehouse OPA Greek yogurt strawberry poppyseed dressing which is 2 Tbsp for 2 smartpoints. However; I love serving this salad with my creamy homemade poppyseed.  Click HERE for recipe. 

Can I make this salad for a large group or gathering? 

Yes, you bet! This recipe makes ONE large serving but could easily serve two people. If you are making this for a potluck or family gathering -just quadruple the recipe. That means you’ll use 1 cup of fruit, two heads of romaine lettuce, 12-16 oz. of cooked chicken strips, ect. 

How do I make this Strawberry Poppyseed Salad (Panera Copycat)?

 In a bowl, arrange washed, chopped romaine lettuce, strawberries, oranges, pineapple, blueberries chicken, and toasted pecans.

To make the dressing, add all the ingredients into a salad dressing container or a mason jar.

Shake all the ingredients together.

Chill in the fridge for 30-60 minutes before using.

Drizzle salad with poppyseed dressing and serve!

Salad Ingredients:

  • 3 oz. skinless boneless chicken strips, cooked-I like to use the Tyson Grilled and Ready Chicken Breast Strips 
  • cups romaine lettuce, chopped
  • 1/4 cup canned mandarin oranges, juice drained
  • 1/4 cup fresh strawberries, thinly sliced
  • 1/4 cup canned pineapple chunks, juice drained
  • 1/4 cup fresh blueberries, washed and patted dry
  • 2 Tbsp or 15 grams toasted pecans, chopped (optional)

Homemade Creamy Poppyseed Dressing:

  • 2 Tbsp light Kraft mayo
  • 1 Tbsp unsweetened almond or skim milk
  • 1/2 Tbsp sugar or white granulated sugar sweetener such as Lakanto Classic monk fruit sweetener 
  • 1/2 Tbsp apple cider vinegar
  • 1 tsp poppy seeds

Directions:

  1. In a bowl, arrange romaine/spinach/lettuce, strawberries, oranges, pineapple, blueberries chicken, and toasted pecans, if desired.
  2. To make the dressing, add all the ingredients into a salad dressing container or a mason jar. Shake all the ingredients together. Chill in the fridge for about an hour before using.
  3. Drizzle salad with poppyseed dressing and serve!

Makes 1 large salad serving including 2 Tbsp homemade dressing

Just a question before making. Why Kraft mayoi normally use Dukes with canola oil.
