Plus, it’s drizzled with a light Poppy Seed White Balsamic Dressing that adds just the right amount of tang to balance all that sweetness.

What ingredients do I need to make this Strawberry Spinach Salad?

  • Baby spinach-rinsed and patted dry.
  • Fresh strawberries- cleaned, hulled and cut in half.
  • Toasted pecans-chopped. 
  • Red onion-thinly sliced.
  • Fat free feta or reduced fat gorgonzola cheese-crumbed.
  • White balsamic vinegar or balsamic vinegar
  • Extra-virgin olive oil
  • Poppy seeds
  • Honey
  • Dijon mustard
  • Kosher salt
  • Black pepper

What ingredients can I add or add to Strawberry Spinach Salad??

  • Chicken or shrimp-for added protein 
  • Sliced almonds– toasted 
  • Avocado-sliced

When using raw onions in salads, I like to soak them in cold water first. This preserves the onions’ flavor but removes the bitter aftertaste.

How do I toast my pecans? 

To toast pecans place a small skillet over low heat. Spray lightly with cooking spray. Add chopped pecans and stir often for about five minutes.  Cool before adding to the salad.

How long does this salad stay fresh for?

Store leftover salad (without dressing) in the refrigerator for up to 4 days. Refrigerate the leftover dressing in an airtight container for up to 5 days, shake before serving.

How do I make this Strawberry Spinach Salad?

Combine all the dressing ingredients in a medium bowl.

Whisk ingredients until combined thoroughly.

Pour dressing into a sealed jar or container.
In a large bowl combine spinach, strawberries, toasted pecans, red onion and feta cheese.Before serving, drizzle dressing over salad.

Toss until well combined. Serve immediately.
