What ingredients do I need to make these Two Point Funfetti Cake Mix Cookies?

These Two Point Funfetti cookies are simple to make using only ingredients. These are make with the Pillsbury sugar free yellow cake mix.  The Pillsbury sugar free yellow cake mix can be found at Walmart, Kroger stores, Food Lion, or online HERE on Amazon.

Here are the 4 ingredients you will need to make these:  

  • Pillsbury Sugar free yellow cake mix– When baked the leavening agents in the cake batter allow it to rise and create a fluffy texture while cookies will puff up slightly but will flatten out after removing them from the oven. These cookies are chewy and cake like!
  • Eggs-you could use 4 egg whites, or 1/2 cup liquid egg as a substitute for the whole eggs. The eggs thicken the batter, adds moister, and gives the cookies the fluffy texture. 
  • Unsweetened applesauceused as a substitute for oil. You could use a 1/2 cup pumpkin puree as a substitute for the unsweetened applesauce, if you prefer.
  • Sprinkles – Adds color, texture, and sweetness! And let’s be honest..everything is better with sprinkles! 

How do I make these Two Point Funfetti Cake Mix Cookies

Preheat oven to 350 degrees.

Line two cookie sheets with parchement paper.

In a large bowl combine, cake mix, eggs, and unsweetened applesauce.

Whisk until well combined.

Fold in 2 Tablespoons of sprinkles. Mix until well combined.

Allow the batter to sit for a few minutes so that it thickens. 

Using a medium scoop or spoon, scoop the batter onto the prepared cookie sheets-about 2-inches apart.

Sprinkle evenly the remaining sprinkles over the top of cookies. 

Bake for 8- 10 minutes or until cookies are set.

Remove from oven. 

Allow them to cool on the cookie sheets for 5-10 minutes before transferring them to a cooling rack.

These were excellent out of the oven and I was so excited. However, they soon turned to mush in the storage container - almost back to raw dough. Any way to avoid this?

Hi Rachel,

Thank you for reaching out. Keeping them fresh comes down to moisture control. I do recommend storing the leftovers the fridge and place a piece of wax or parchment paper in between them.
