White Chicken Enchiladas

 

These White Chicken Enchiladas are my absolute favorite enchilada recipe. They are creamy, cheesy and lip smacking delicious!

Servings: Makes 12 enchiladas

For these delicious White Chicken Enchiladas you will need:

2 ( 10 oz. ) cans green chile enchilada sauce

 

 

2 (12.5 oz) cans canned chicken breast

1 (4 oz.) can diced green chiles

 

12 white corn tortillas 

 

1 (8 oz.) package 1/3 less fat cream cheese

1/2 cup light shredded cheese

 

How do I make these White Chicken Enchiladas? 

In a large mixing bowl combine, drained chicken, cream cheese

and green chiles.

Stir until well combined.

Top each tortilla with 1/4 cup of chicken mixture.

Bake for 20 minutes or until bubbly.

 

Ingredients:

  • 8 oz. package 1/3 less fat cream cheese, room temperature
  • 2 (12.5 oz.) can white chicken breast, drained ( I use Kirkland) or 10 oz. cooked skinless, boneless, shredded chicken breasts
  • 1 ( 4 oz.) can roasted, peeled green chiles
  • 2 ( 10 oz.) cans green enchilada sauce ( I use Old El Paso Enchilada sauce)
  • 12  white corn tortillas ( I use Mission brand)
  • 1/2 cup light shredded cheese ( I use Trader Joe’s 3 lite Mexican blend)
  • 3 green onions, diced for garnish (optional)
  • 2 Tbsp canned jalapeños, diced for garnish ( optional)

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl combine, drained chicken, cream cheese and green chiles. Stir until well combined.
  3. Spray a 13 x 9 baking dish with non stick cooking spray. 
  4. Top each tortilla with 1/4 cup of chicken mixture. Roll up and place seam down in prepared baking dish.
  5. Repeat for all 12 tortillas. 
  6. Pour enchilada sauce evenly over enchiladas. Sprinkle cheese evenly over the top of sauce. 
  7. Sprinkle diced green onions and jalapeños over the top of the cheese, if desired.
  8. Bake for 20 minutes or until bubbly.

  • The 10 oz. of skinless boneless chicken breasts would be the same equivalent point value for 2 ( 12.5 ) oz. of canned chicken if you are on the green plan. If you are following the blue and purple plan you may use up to 25 oz. of cooked skinless breast since it is zero points on both of these plans.

you recipe says 2 12oz cans of chicken or 10 oz of chicken breast. Should that be 20 oz of total chicken?

If you are following the blue and purple plan you may use up to 25 oz. of cooked skinless breast since it is zero points on both of these plans. I know that can be quite confusing.
