Zero Point Patriotic Fruit Salad

This Zero Point Patriotic Fruit Salad is a perfect dish to take to your Holiday festivities. A combination of red and blue fruit drizzled with a little lemon juice for added sweetness!

Just adding star-shaped watermelon turns this fruit salad into a Holiday fun recipe. This is a perfect way to get your kids to eat more fruit by cutting it into star, heart, or flower shapes. You can also just use a basic cookie cutters to create perfectly cut slices of fruit.

Ingredients:

  • 1 lb. strawberries, sliced
  • 2 cups blueberries
  • 2 cups seedless watermelon
  • 1/2  Tbsp fresh lemon juice
  • 1 tsp sugar, optional

Directions:

  1. Wash and rinse blueberries and strawberries.
  2. Cut the tops off the strawberries. Slice the strawberries into to fourths.
  3. Slice watermelon into 1½” slices.
  4. Use a small star cookie cutter to make the watermelon into the shapes of stars.
  5. Mix the strawberries and blueberries together in a large serving bowl, sprinkle with 1 tsp of sugar and drizzle with lemon juice.  Toss to coat.
  6. Top the fruit salad with the star watermelon pieces. Refrigerate until cold, or for at least 20 minutes.
  • The best way to start cutting out star shaped watermelon pieces is to place watermelon on a cutting board. Use a large knife to cut the watermelon in half. Work on half of the watermelon at a time. Use a knife to cut away a slice of the rind, just down to the pink flesh. Continue making large slices around the watermelon to remove all of the rind. Once you have trimmed the rind off the melon, cut it into large slices. Use the cookie cutter to punch out stars using the large slices of watermelon. 
  • Add sliced bananas if desired right before serving.
