1 Point Oatmeal Chocolate Chip Bites

 

Ingredients:

  • 1/4 cup unsweetened almond milk
  • 1 scoop Quest Protein Powder (any flavor) or one sample packet Quest Variety Protein Powder Packs
  • 1 egg
  • 1/4 cup unsweetened applesauce
  • 2 cups uncooked old-fashioned oats
  • ½ tsp baking soda
  • 1/2 Tbsp vanilla extract
  • 1 tsp cinnamon
  • 28 g Lily’s dark chocolate no sugar added chocolate chips, or any no sugar added chocolate chips Lily’s Chocolate Chips

Directions:

  1. Preheat oven to 375 degrees
  2. In a medium bowl, combine almond milk, applesauce, egg and vanilla. Stir together until smooth. Stir in the uncooked old-fashioned oats, baking soda and cinnamon.
  3. Then add Quest Protein Powder, chocolate chips, mix until well blended.
  4. Drop dough by rounded spoonful’s onto lined with parchment cookie sheets. Bake for 10 to 12 minutes in the preheated oven. Remove cookies from pan to cool on wire racks.

Hi Lindsey, love your blog and recipes! Anywho, can you tell me how many points the chips are? We don't have them here in California and I don't have the $$ to buy the Lily's kind. I wanting to use regular sugar mini chips instead... would that work? Thanks Cindi

Yes- you substitute any chocolate chips for the Lily’s chocolate chips. Please keep in mind the point values can vary. The Lily’s chocolate chips are 2sp for 60 chips.

Hi, I've never tried protein powder and hate to invest $40 for a big canister just to try these cookies. Any substitutes? Even if it means an extra point?

Yes, you can substitute the protein powder for 1/4 cup Kodiak Pancake mix or self rising flour.

Yes, absolutely. Skim or regular milk could be substituted. It may change the points slightly-but not much. Thank you so much
