This is an easy-to-make recipe that your entire family will love! It’s loaded with skinless, boneless chicken breasts, cream cheese, light mayo or non fat plain Greek yogurt, crumbled bacon, cheddar cheese, and ranch seasonings. It’s naturally gluten free and low in carbs! This dish makes for the perfect weeknight dinners or meal prep for your week!
What ingredients do I need to make this Skinny Bacon Ranch Chicken Bake?
- Chicken breast–Try using thin cut chicken breast. You could also cut large chicken breasts in half (butterfly)or pound them out. Thin chicken breasts will cook more quickly and evenly, and they tend to stay more tender.
- Reduced fat cream cheese– I like to use Kroger reduced fat cream cheese. Be sure it is softened at room temperature.
- Reduced fat cheddar cheese- I like to use velvetta shreds or fat free cheddar
- Light Mayo– I like to use Kraft mayo. you could also use non fat plain Greek
- Ranch powder- dry ranch mix
- Bacon– I like to use Hormel precooked bacon. You could also use cooked center cut bacon, if you prefer
- Green Onions-chopped

How do I make this Skinny Bacon Ranch Chicken Bake?
Preheat the oven to 350˚degrees.
In a medium sized bowl, mix cream cheese and the light mayo until smooth.
Stir in bacon crumbles, green onion, 1/2 cup of the reduced fat cheddar cheese, and ranch powder together until combined.
Spray a 3-quart baking dish with non stick cooking spray.
Season chicken breast with salt and pepper. Lay chicken breasts in prepared baking dish.
Spread the cheese mixture over the chicken breasts.
Top with remaining cheddar cheese.
Bake uncovered for 30-40 minutes or until chicken is cooked through or until it reaches 165˚ degrees internal temperature.
Garnish with additional bacon and green onions, if desired

- 6 slices precooked or center cut bacon, cooked and crumbled
- 3 green onions, chopped
- 1 cup reduced fat or fat free cheddar cheese, shredded, divided
- 1 Tbsp Hidden Valley ranch dry mix powder
Directions:
- Preheat the oven to 350˚degrees.

This is a family-pleasing recipe. I used chicken tenders. Couldn't have turned out better. We will definitely make this again!
